Beef Enchiladas

1 LB Extra Lean Ground Beef
1 Red Pepper, Chopped
1 Can Corn, Drained
1 Packet Taco Seasoning
10 Fajitas Sized (about 80 calories each) Tortillas
1 Can Enchilada Sauce

Saute ground beef, corn, and red pepper. Drain and rinse both beef and the pan. Add taco seasoning and prepare according to packet directions.

Scoop 1/3 C mixture into each tortilla and place into a lasagna pan. Drizzle with enchilada sauce. Bake for 30min @ 375.
