Good Old Fashioned Pancakes

1-1/2 C Flour
3-1/2 t Baking Powder
1 t Salt
1 T Sugar
3 T Butter
1 Egg
1-1/4 C Milk

In a medium sized bowl combine flour, baking powder, salt, and sugar. Mix well.

In a small bowl, melt the butter. Add egg and milk. Mix well.

Add wet mixture to dry mixture and stir until just combined. Do not over stir.

Cook, covered, in pan over medium-high heat until small bubbles form on the top of the pancake. Flip and cook other side.

My comment is just to make sure that the Milk/Mixture stay as cold as possible at all times during the cooking process. I used to work at IHOP so the secret is to keep the Milk like ICE cold as it makes for FLUFFY pancakes!
