Cinnamon Stove-top Apples

4 Apples, Cored and Diced (no need to peel)
Lemon Juice, to taste (water works OK too)
Cinnamon to taste
1 T Cornstarch

Combine apples, lemon juice (or water), and cinnamon in a sauce pan. Cover and cook over medium heat until the apples begin to soften, about 15-20 minutes. Sprinkle cornstarch on and mix well. Cover and cook another 5-10 minutes or until very thick.
