3-2-1 Ribs


1 Rack Ribs
BBQ Rub, as needed

The night before remove silverskin membrane.

Season the meat with with BBQ Rub.

When ready to cook, set temperature to 180F and preheat for 15 minutes. Smoke ribs, meat-side up for 3 hours.

After the ribs have smoked for 3 hours, increase the temperature to 225F for 3 hours.

Wrap in several sheets of foil and return to grill for 2 hours.

Remove foil and place directly on grate. Grill until it reaches temp. At the time this document was written, Derik didn't know what the temp was.
