Marla's Chocolate Almond Balls
Ingredients
- 2 (16-ounce) boxes confectioners' sugar
- 1/2 cup (1 stick) butter, softened
- 1 (14-ounce) can sweetened condensed milk
- 1 teaspoon pure almond extract
- 1 (14-ounce) package shredded coconut
- 1 1/2 cups chopped nuts
- 2 (12-ounce) package chocolate chips
Directions
Cream together sugar and butter in a bowl; add milk. Stir in almond extract, coconut, and nuts; mix well. Form candy into 1-inch balls. Place on waxed paper and refrigerate at least 3 hours. Melt chocolate in top of double boiler, stirring well. Remove from heat but allow chocolate to remain over hot water. (If chocolate becomes too thick, return to heat for a minute or so to thin). With a toothpick, dip each ball in chocolate and place on waxed paper until set.

3lbs Whole Kernel Corn, Cooked
1/2 C Butter
1 (8oz) PKG Cream Cheese
Combine the corn, butter or margarine and the cream cheese in a medium sized saucepan. Cook over medium heat for about 20 minutes. Serve hot.

Crock Pot Cola Ham
4lb Fully Cooked Ham
1/2 C Brown Sugar, Packed
1 T Mustard
2 (12oz) Cans Regular Coca-Cola (NOT DIET), about 3 cups
Pour coca cola in the bottom of a crockpot.
Lightly score ham in diagonal lines first one way, then crosswise, to form a diamond pattern, being careful not to cut any deeper than about a eighth of an inch. (You can score both sides if you like).
Make a paste of brown sugar and mustard
Rub paste into ham on sides that have been lightly scored.
Transfer to crock pot. Cook on low 7-8 hours.
Amber's Gingersnaps
3/4 C Shortening
1 C Sugar
1 Egg
2 t Baking Soda
1 t Ginger
1 t Cloves
1 t Cinnamon
1/2 t Salt
1/4 C Molasses
Cream shortening and sugar. Add molasses and egg. Mix thoroughly. Add dry. Roll dough into balls and roll them in sugar. Refrigerate for 10-15min. Bake at 350F for 15min.

1/2 C Brown Sugar/Brown Sugar Splenda
4 T Butter
2 t Cinnamon
Preheat oven to 350F
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through.
Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter.
Place in a shallow baking dish and sprinkle with cinnamon.
Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

1 C Pecans
1 C Coconut
1 Egg
1 t Almond Extract
1/3 C Sugar/Splenda
Preheat oven to 350F. Grind pecans until finely ground. In a bowl, combine all ingredients and mix well.
Drop by packed tablespoon full onto cookie sheet. Bake 15 minutes.

Reese's Peanut Butter Cup Cupcakes.
1 Box Devil's Food Chocolate Cake Mix
Eggs, Water, Oil (consult the cake mix box)
36 Mini Reese's Peanut Butter Cups
Frosting
Prepare cake batter according to package directions.
Preheat oven to 350F (consult the cake packaging)
Line a muffin pan with muffin liners. Put about 1 heaping tablespoon of cake batter in each liner. Top with a reese's peanut butter cup. Put another heaping tablespoon of cake batter on top of the reese's peanut butter cup. Liner's should be 2/3 of the way full.
Bake for about 22 minutes (consult the cake packaging)
Let muffins cool, then frost. Chop remaining peanut butter cups in half to decorate the cupcakes.

1 Loaf Plain French Bread OR Small Hoagies
2 Sticks Butter, Softened
Preheat oven to 350F.
If using french loaf, spread 1 stick of butter per each half.
If using small hoagies, spread 1 T of butter per each half.
Bake for 10 minutes, then turn broiler on high. Broil about 2 minutes until the top is VERY BROWN and the edges start to BURN.
It must be very dark!!

Olive Oil
Salt to Taste
Pepper to Taste
Rosemary to Taste
Bring a pot of salted water to a boil, and boil potatoes until tender. (40 min?)
Drizzle a cookie sheet with oil. Gently mash each potato until it looks similiar to a cookie.
Brush the tops of potatoes with additional olive oil, then sprinkle with salt, pepper, and rosemary.
Bake at 450 for 25min.

Not digging the rosemary. trying dill next time. also, upped the bake time to 30min for ultra nom-able-ness!
Sour Cream Mushroom Rice
Basic Whole Chicken in a Crock Pot

1/2 PKG Turkey Bacon
4 oz Swiss Cheese
1 T Butter, Melted
6 Eggs
1-1/2 t Salt
3/4 C Flour
2-1/4 C Milk
Preheat oven to 350F. Cook and crumble turkey bacon.
Spray a lasagna pan with non stick spray. Shred swiss cheese into pan. Add cooked turkey bacon.
In another bowl, combine melted butter, eggs, salt, flour, and milk. Mix well.
Pour egg mixture into lasagna pan with Swiss cheese and bacon. Mix gently.
Bake for about 45 minutes or until quiche is set.
Basic Pinto Beans and Rice
1LB Pinto Beans
1-1/2 C Uncooked White Rice
About 9 C Water, Divided
Butter, To Taste
Vinegar, To Taste
Combine pinto beans and 6 C water. Simmer for 1.5 hrs.
Add uncooked white rice and remaining 3 C of water. Simmer for 20-30 min or until rice is done.
Add butter and vinegar to taste.

1 & 1/2 Stick Butter, Melted
1 C Brown Sugar, Packed
1/2 C White Sugar
1 T Vanilla Extract
1 Large Egg & 1 Large Egg Yolk OR 2 Small Eggs
1/2 t Baking Soda
1/2 t Salt
2 C Flour
1 Bag Ghirardelli Chocolate Chips
Preheat oven to 325F.
Cream together melted butter and sugar. Add vanilla and eggs. Mix well. Add baking soda and salt. Mix well. Add flour by the spoonful (or sift). Stir in chocolate chips by hand. Place 1/4 C of cookie dough, rounded into a ball, on a sprayed cookie sheet.
Bake 15-17 minutes or until the edges are slightly toasted. Let cookies cool slightly before eating.

1 Stick Butter, Melted
1 C Sugar
2 Eggs
1 t Vanilla
1/3 C Cocoa
1/4 t Salt
1/4 t Baking Powder
1/2 C Flour
Preheat oven to 350F.
Melt butter. Remove pan from heat. Add sugar, eggs, and vanilla. Mix well. Add cocoa, salt, and baking powder. Mix well. Add flour. Mix well.
Bake 30 minutes.
NOTE: For Whey Protein Brownies, substitute 1/2 C Flour with 1/3 C Flour and 1/3 C Whey Protein

4 Large Baking Potatoes, about 30 oz
1 T Oil
1 t Salt
1 t Black Pepper
1/2 t Garlic Powder
1/2 t Paprika
Cut potatoes into desired fry shape. Rinse well with water to get rid of the starch.
In a bowl combine potatoes and remaining ingredients. Mix well.
Bake at 450F for about 35min
Noodle Pudding

1/2 LB Egg Noodles
4 Eggs
1/2 C Sugar
1/2 C Butter
8 oz Cottage Cheese
8 oz Sour Cream
Cook noodles. Drain. Beat eggs, add sugar little at a time. Melt butter.
Add cottage cheese, sour cream, noodles, and melted butter to egg mixture and mix well.
Pour into casserole dish and bake for 45min @ 350F.
Shrimp Scampi

2 t Minced Garlic
1/4 C Butter (1/2 Stick)
1 lb Fully Cooked De-veined Shrimp
1/4 C Lemon Juice
1/2 t Pepper
1/4 t Oregano
Hot Cooked Rice or Pasta
Melt butter in a saute pan. Add garlic and saute until fragrant. Add remaining ingredients. Cover and cook until heated through. Serve over rice or pasta
