Chicken Adobo

4 Chicken Breasts, Cut into Bite Size Pieces (Pork OK)
2 Large Baking Potatoes, Cut into Bite Size Pieces
1 Onion, Halved and Sliced Thin
1 t Garlic Powder
3 Cloves Garlic, Crushed OR 1 T Minced Garlic
1/2 t Crushed Red Pepper
1/3 C Soy Sauce
1 T Vinegar
2 Bay Leaves

Place chicken and potatoes in the bottom of a dutch oven. Pour everything else on top. Cover and cook until chicken is done, about 20 minutes or so. The longer you cook this dish, the better it gets.

Garlic Dip for Lumpia

1 t Minced Garlic, about 3 cloves
Pinch Crushed Red Pepper
Pinch Black Pepper
1/4 C Vinegar

Mix all together and dunk your lumpia in it

Lumpia

2.25 lbs Ground Beef (85% lean) OR Pork
1/2 Large Onion, Finely Minced
1/2 Green Pepper, Finely Minced
2 T Garlic Powder
1/2 t Crushed Red Pepper
Black Pepper, to Taste
1/4 t Seasoned Salt
1 T Sesame Oil
1 Egg
Lumpia Wrappers

Egg Wash
1 Egg
2 T Water

Mix all of the Lumpia Filling ingredients in a bowl. Place about 1-2 T of filling at the top of the lumpia wrapper and roll up, sealing with a bit of egg wash.

Fry on medium to medium low heat until golden brown. Drain lumpia at an angle after frying.

Fried Plantains

1 Plantain, Sliced Thick
Sugar, to Taste
Cinnamon, to Taste
1/2 T Butter

Peel and slice the plantains. Sprinkle with sugar and cinnamon.  Preheat pan over medium high heat for a few minutes. Melt in butter and pam spray. Flip when the bottom is dark brown.
