Mexican Hot Chocolate

1/4 C Pure Cocoa Powder
1/4 C Sugar
1/2 t Cinnamon
2 C Milk
1/3 C Heavy Cream

In a heavy sauce pan, combine cocoa, sugar, and cinnamon. Stir until warm and fragrant. Add milk and whisk until mixture is combined and heated through. Add cream and stir until hot.

DO NOT BOIL!!!!

Beer Bread

1-1/2 C Whole Wheat Flour, Sifted*
1-1/2 C White Flour, Sifted*
3 t Baking Powder
1 t Salt
1/4 C Sugar
1 (12 oz) Can Beer
1/4 C (1/2 Stick) Butter, Melted

Preheat oven to 375F. Combine flour, baking powder, salt, and sugar. Mix well WITH A FORK! DO NOT USE A SPOON! Pour in Beer and mix until just combined. DO NOT OVER STIR. Pour into a greased loaf pan. Top with melted butter. Bake for 1hr.

* You can use all white, or all wheat flour. THE FLOUR MUST BE SIFTED. If you don't have a sifter you can measure flour into a measuring cup 1 spoon at a time. DO NOT MIX WITH A SPOON since it will compact a flour.

Dad's Fried Potatoes

1/2 Large Potato, Chopped or Shredded
1 Small Onion, Chopped
Salt & Pepper or Seasoned Salt
Olive Oil

Chop potato into small pieces or shred. RINSE RINSE RINSE or your dish will turn into mush. Saute, in oil, with chopped onion. Season with salt and pepper to taste.

I added mushrooms to this dish and it turned out amazing.

BE SURE TO RINSE YOUR POTATOES!!!! This would probably be good with ham too.

Bison Burgers



1LB Ground Bison
Black Pepper
Garlic Powder
3 t Milk
3 t Cornmeal
Onions, Sliced
Mushrooms, Sliced

Combine bison, pepper, garlic powder, milk, and cornmeal. Separate into 6 burgers. Cook then drain on paper towels.

Add mushrooms and onions to pan. cooked until caramelized. Top burgers with caramelized onions and mushrooms.

Parsnip Oven Fries

1LB Parsnip, Sliced Thin
1 t Cumin
1 t Coriander
Pepper

Preheat oven 425F. Combine all ingredients. Bake for about 40 minutes or until crunchy.

Crazy Crust Pizza

1 C Flour (White, Wheat, or Both)
1 t Oregano
Black Pepper, to Taste
2 Eggs
+++
2/3 C Milk if using WHITE FLOUR or
3/4 C Milk if using HALF WHITE & HALF WHEAT FLOUR or
1 C Milk if using WHEAT FLOUR
+++
1/2 LB Ground Beef, Cooked ***
1/2 C Tomato Sauce/Ragu
Lots of Chopped Veggies, Raw (Onion, Pepper, Mushrooms, Tomatoes, Olives, etc)
4 oz Cheese, Shredded (About 1 C)

Preheat oven to 400F. Start cooking ground beef. Combine flour, oregano, black pepper, eggs and Milk. Whisk until fully combined with no lumps. Pour batter into two 8 inch round foil pans, or one larger 8x11 pan, lightly greased with olive oil. Sprinkle meat on top and drizzle with tomato sauce/ragu. Pile on the veggies. Bake for 20 minutes. Top with shredded cheese and other garnish, then return to oven for 10 minutes. Serves two.

*** or 8 oz of some other meat

Steve's Apple Pie Liquor



1 Gallon Apple Cider
1 Gallon Apple Juice
4 C Sugar
6 Cinnamon Sticks
1 Bottle Everclear

Combine apple cider, apple juice, sugar, and cinnamon sticks in a large stock pot. Bring to boil, reduce heat, simmer for 2 hours.

Remove from heat. Pour in everclear. Stir. Get the diabetus.

Apple Pie Breakfast

3 C Puff Rice Cereal (2 oz/56g)
1 C Plain Non-Fat Yogurt
1 oz Pecans, Chopped or Cookie Pieces (About 1/4 C)
1 Medium Apple, Cored and Chopped***
Nutmeg, to Taste
Cinnamon, to Taste
Honey

Combine yogurt, apple, cinnamon, and nutmeg. Stir well to combine.

Add cereal and cookie pieces. Stir a very SMALL amount--you don't want your cereal getting soggy.

Add a little honey for some sweetness.
