Amish White Bread

2 T Yeast
2/3 C Sugar
2 C (16 oz) Warm Water (110-115F)
1 1/2 t Salt
1/4 C (2 oz)  Oil
6 C (30 oz) Bread Flour 
Note: Can use half whole wheat flour and half bread flour


IMPORTANT: Do not attempt to make a double batch in a kitchen aid mixer. The flour will go flying everywhere!

Combine the yeast and sugar in kitchen aid mixing bowl. Add the warm water and agitate slightly. Let sit for about 10-15 minutes or until VERY foamy.

Add salt and oil. Mix well with a whisk. Add 1 C of flour at a time, mixing well after each addition. After the 3rd cup of flour, move over to the mixer. Turn on setting 1 or 2 and slowly mix in flour. Add flour 1 cup at a time, allowing the flour to become fully incorporated before adding the next. When the dough is done, you should be able to poke it and it will immediately spring back.

Let rise for about an hour or until doubled in size.  Punch down and knead a few times on a lightly floured surface.

The dough should be about 53 oz total. This will make (2) 26 oz loaves OR about (17) 3 oz rolls. Shape the dough however you wish, then let rise in a draft free place for another 30 minutes or so. 

Bake in 350F degree oven for 25-30 minutes, or until golden brown.
