Note: I've also simmered a version of these meatballs made with pork in spaghetti sauce. Turns out good as well! I would say you can likely make these from beef, pork, ground chicken, or turkey and will still turn out good.
1lb Ground Beef
1 C Bread Crumbs
1 T Dried Parsley
1 T Parmesan Cheese
1/2 t Black Pepper
1/4 t Garlic Powder
1 Egg, Beaten
2 C Sweet Baby Rays BBQ Sauce
2 C Water
In a large bowl combine beef, bread crumbs, parsley, cheese, black pepper, garlic powder, and egg. Mix well. Form into balls. Place on a cookie sheet and chill in the fridge over night.
In a pan combine BBQ Sauce and water. Mix well. Bring to a simmer. Simmer meatballs, covered, for about 30 minutes. Do not over-stir the meatballs while simmering or they may fall apart.
