1-1/2 C Flour
3/4 C Sugar
1/2 t Salt
2 t Baking Powder
1/3 C Oil (or bacon grease, if making bacon blueberry muffins)
1 egg
Milk (see note)
1 C to 1 Pint Fresh Blueberries (NOT FROZEN!!!)
1lb Bacon, Cooked and Crumbled, Grease Reserved (Optional)
1/2 C Sugar
1/3 C Flour
4 T Butter, Room Temp
1-1/2 t Cinnamon
In a large bowl combine 1-1/2 C flour, 3/4 C sugar, 1/2 t salt, and 2 t baking powder.
In a 1 cup measuring cup add oil/bacon grease, 1 egg, and top off with milk until you have 1 cup. Add additional 1/2 C milk.
Add wet ingredients to dry ingredients and mix just until COMBINED. Do not over mix. Fold in blueberries. Fold in bacon if making blueberry bacon muffins.
Combine 1/2 C sugar, 1/3 C flour, 4 T butter, and 1-1/2 t cinnamon for crumb topping.
Line 2 pans with about 16 liners. Fill up liners about 2/3 full. Top each muffin with a small amount of crumb topping, about 1 or 2 teaspoons.
Bake in 400F oven for 20-25 minutes or until a toothpick comes out clean.

OMG! Made this for a friend recovering from surgery. He loves blueberries and what man doesn't love bacon? They are fabulous! The recipe is spot on and easy. I did use about a 1/4 cup of bacon grease and about 8 slices of bacon. I have no doubt he will love them and aid in his recovery. Thank You for sharing.
