Southern Peach Cobbler

8 Fresh Ripe Peaches, Pitted and Chopped
1/4 C White Sugar
1/4 C Brown Sugar
1/4 t Cinnamon
1/8 t Nutmeg
1 t Lemon Juice
2 t Cornstarch

1 C Flour
1/4 C White Sugar
1/4 Brown Sugar
1 t Baking Powder
1/2 t Salt
6 T Butter, Chilled And Cut Into Small Pieces
1/4 C Boiling Water

3 T Sugar
1 t Cinnamon

Combine peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl. Mix well. Transfer to a large lasagna pan and bake in 425F oven for 10 minutes.

Combine flour, white sugar, brown sugar, baking powder, and salt. Mix well. Add butter and mix well with your hands until mixture resembles cornmeal. Add boiling water. Mix well.

Drop spoonfuls of topping over peaches. Combine sugar and cinnamon in a small bowl. sprinkle over cobbler. Return cobbler to oven and bake for 30 minutes or until golden.

Banana Crumb Muffin Bread

1-1/2 C Flour
1 t Baking Soda
1 t Baking Powder
1/2 t Salt
3 VERY RIPE Bananas, Mashed
3/4 C Sugar
1 Egg
5 T Butter, Melted

In a large bowl mix together flour, baking soda, baking powder, and salt.

In another large bowl mixed together mashed bananas, sugar, egg, and melted butter.

And wet ingredients to dry ingredients and mix until just combined. Do not over mix.

Pour into a square baking dish. Bake for 40 minutes @ 375F or until a toothpick inserted in the middle comes out clean.

Downeast Maine Pumpkin Bread

1 (15 oz) Can Pumpkin Puree
4 Eggs
1 C Vegetable Oil
2/3 C Water
3 C Sugar
3-1/2 C All Purpose Flour
2 t Baking Soda
1-1/2 t Salt
1 t Cinnamon
1 t Nutmeg
1/2 t Cloves
1/4 t Ginger

In a large bowl combine pumpkin puree, eggs, vegetable oil, water, and sugar. Mix well.

In another large bowl, combine flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Mix well.

Add the wet ingredients to the dry ingredients and mix until just combined. Do not over mix.

Transfer to a large lasagna pan sprayed liberally with Non-Stick cooking spray. Bake for 1hr @ 350F or until a toothpick comes out clean.

Sweet Parmesan Oven Corn

8 Fresh Ears of Corn
1 Stick Butter
1 Head Garlic, Peeled and Finely Chopped
1 t Rosemary
1 t Basil
1 t Thyme
1 t Sage
1-1/2 t Salt
1-1/2 t Pepper
1/2 C Parmesan

Place corn in the bottom of a pan just large enough to hold them.

Melt butter in microwave for about 1 minute to melt. Stir in remaining ingredients.

Spoon over corn. Cover and bake in 425F oven for 35 minutes.

The Garlic Bread

1 Head Garlic, Crushed, Minced and Roasted
1 Stick Butter
1 (16 oz) Loaf Bread

Top garlic with oil and sea salt. Wrap tightly in foil and bake in 350F oven for 35 minutes.

Melt butter in microwave. Add roasted garlic and let stand for 5 minutes.

Slice the loaf into 8 slices. Saturate 1 side of each slice of bread in the butter and garlic. Divide any leftover minced garlic amongst the bread.

Place on cookie sheet, garlic butter side up, and bake for 10 min at 350.

Turn broiler on high for 2 minutes, or until the bread is VERY brown and edges are starting to burn.

Makes 8 Servings. Each of the 8 servings provides to 2 servings of grains as outlined by choosemyplate.gov

Country Green Beans and Ham













2 T Butter (1/4 Stick)
1 Head Garlic, Crushed Peeled and Chopped
2lbs Fresh Green Beans
1/2 Large Onion, Chopped
2lbs Fully Cooked Ham, Diced
Salt and Pepper, to Taste

You can roast the garlic in a little olive oil instead of cooking it in butter. Drizzle minced garlic with olive oil and roast in aluminum foil for 35min @ 350F. Otherwise...

Melt butter in a large stock pot. Cook garlic until fragrant. Add remaining ingredients. Cover and cook for about 30 minutes or until green beans are tender.
