Spicy Chicken Quesadillas

1 lb Chicken, Cut Into Bite Size Pieces
1 T Butter
Black Pepper, To Taste
Sea Salt & Garlic, To Taste
Seasoned Meat Tenderizer, To Taste
2 Small White Onions, Cut Into Rings
1 Small Red Onion, Cut Into Rings
1 Jalepeno, Chopped
2 Sweet Heat Peppers, Chopped
Tortillas
Mozzarella Cheese

Melt butter in pan. Add chicken and season to taste with black pepper, sea salt & garlic, and seasoned meat tenderizer. When chicken is almost done add veggies and mix well. Put lid on pan and cook until chicken is done. Remove lid from pan and cook until most of the liquid is gone. Transfer to a bowl and keep warm. Place tortilla in bottom of pan, top with mozzarella and chicken mixture. Fold tortilla over and cook until sides are golden brown.

Basic Microwaved Corn






Corn
Water

Dehusk corn and wash thoroughly. Place corn in the bottom of a microwave safe dish. Add just enough water to cover the bottom of the dish. Cover the dish in plastic wrap or press-and-seal.

Microwave 20 minutes.

No Bake Coffee Cheesecake

2 (8 oz) PKGs Cream Cheese
1 Packet Knox Gelatin
1/2 C Sugar
8 oz Hot Brewed Coffee

Spray a spring form pan with non stick spray. You can also pour this into a pre-made graham cracker crust or pat a homemade crust into the bottom of the pan.

Place cream cheese in food processor. Combine knox gelatin and sugar. Mix well. Add to coffee and mix well. Pour mixture over cream cheese. Process until smooth.

Pour into spring form pan and let place in fridge until firm, a few hours.

Rotate the pan gently and the cheesecake will pull away from the edges. Pop the sides off the spring form pan and serve.

Pizza Salad

1 Handful Lettuce
1 C Cooked Pasta
2 oz Chopped Pepperoni
1 oz Mozzarella
2 T Scallions
Oregano, Optional

Combine pasta, pepperoni, and cheese. Heat in the microwave or oven.

On a plate layer lettuce, then pasta/pepperoni/cheese mixture, then green onions, then oregano.

Each serving contains the following, as outlined by choosemyplate.gov
1 Vegetable
2 Grain
2 Protein
1 Dairy

Pollo Fajitas








1 t Chili Powder
1 T Worcestershire Sauce
1 T Cider Vinegar
1 T Soy Sauce
1 T Oil
1-1/2 T Lemon Juice (1/2 Lemon)
1 t Minced Garlic (2 Cloves)
3 Dashes Hot Sauce
1-1/2 lbs Chicken, Cut into Bite Size Pieces
1 Medium Onion, Cut into Bite Size Pieces
2 Green Peppers, Cut into Bite Size Pieces
Tortillas
Cheese

Combine everything except tortillas in cheese in a large ziplock bag and let marinate on the counter for 30 minutes. Cook in a HOT pan, over medium high heat until done.

Serve on tortillas with cheese.

Awesome Slow Cooker Pot Roast











3 to 5 Pounds Roast/Stew Meat
Potatoes, Carrots, Green Beans, Onion, etc
2 (10.75 oz) Cans Cream of Mushroom or Chicken Soup
1 Packet Dry Onion Soup Mix
1/2 C Water

Put meat and vegetables in the bottom of a crockpot.

Combine soup, soup mix, and water. Mix well. Pour on top of meat and vegetables in crockpot.

Cook on low for 8-9 hours or on high for 3-4 hours.
