1 PKG Pizza Dough
Tomato Sauce
Pepperoni
Veggies of your choice
Shredded Cheese
Seasonings

Preheat oven according to pizza dough directions. Pillsbury was 425F.

Unroll and separate dough into single serving sizes. I cut mine into 6 pieces.

Top each piece with pepperoni and veggies of your choosing. Top with cheese and seasonings.

Bake according to pizza dough directions--Pillsbury's directions said about 15min which turned out nicely.

Mexican Hot Chocolate

1/4 C Pure Cocoa Powder
1/4 C Sugar
1/2 t Cinnamon
2 C Milk
1/3 C Heavy Cream

In a heavy sauce pan, combine cocoa, sugar, and cinnamon. Stir until warm and fragrant. Add milk and whisk until mixture is combined and heated through. Add cream and stir until hot.

DO NOT BOIL!!!!

Beer Bread

1-1/2 C Whole Wheat Flour, Sifted*
1-1/2 C White Flour, Sifted*
3 t Baking Powder
1 t Salt
1/4 C Sugar
1 (12 oz) Can Beer
1/4 C (1/2 Stick) Butter, Melted

Preheat oven to 375F. Combine flour, baking powder, salt, and sugar. Mix well WITH A FORK! DO NOT USE A SPOON! Pour in Beer and mix until just combined. DO NOT OVER STIR. Pour into a greased loaf pan. Top with melted butter. Bake for 1hr.

* You can use all white, or all wheat flour. THE FLOUR MUST BE SIFTED. If you don't have a sifter you can measure flour into a measuring cup 1 spoon at a time. DO NOT MIX WITH A SPOON since it will compact a flour.

Dad's Fried Potatoes

1/2 Large Potato, Chopped or Shredded
1 Small Onion, Chopped
Salt & Pepper or Seasoned Salt
Olive Oil

Chop potato into small pieces or shred. RINSE RINSE RINSE or your dish will turn into mush. Saute, in oil, with chopped onion. Season with salt and pepper to taste.

I added mushrooms to this dish and it turned out amazing.

BE SURE TO RINSE YOUR POTATOES!!!! This would probably be good with ham too.

Bison Burgers



1LB Ground Bison
Black Pepper
Garlic Powder
3 t Milk
3 t Cornmeal
Onions, Sliced
Mushrooms, Sliced

Combine bison, pepper, garlic powder, milk, and cornmeal. Separate into 6 burgers. Cook then drain on paper towels.

Add mushrooms and onions to pan. cooked until caramelized. Top burgers with caramelized onions and mushrooms.

Parsnip Oven Fries

Crazy Crust Pizza

1 t Oregano

2 Eggs

2/3 C Milk if using WHITE FLOUR or

1 C Milk if using WHEAT FLOUR

1/2 LB Ground Beef, Cooked ***
1/2 C Tomato Sauce/Ragu
Lots of Chopped Veggies, Raw (Onion, Pepper, Mushrooms, Tomatoes, Olives, etc)
4 oz Cheese, Shredded (About 1 C)

Preheat oven to 400F. Start cooking ground beef. Combine flour, oregano, black pepper, eggs and Milk. Whisk until fully combined with no lumps. Pour batter into two 8 inch round foil pans, or one larger 8x11 pan, lightly greased with olive oil. Sprinkle meat on top and drizzle with tomato sauce/ragu. Pile on the veggies. Bake for 20 minutes. Top with shredded cheese and other garnish, then return to oven for 10 minutes. Serves two.

Steve's Apple Pie Liquor



1 Gallon Apple Cider
1 Gallon Apple Juice
4 C Sugar
6 Cinnamon Sticks
1 Bottle Everclear

Combine apple cider, apple juice, sugar, and cinnamon sticks in a large stock pot. Bring to boil, reduce heat, simmer for 2 hours.

Remove from heat. Pour in everclear. Stir. Get the diabetus.

Apple Pie Breakfast

3 C Puff Rice Cereal (2 oz/56g)
1 C Plain Non-Fat Yogurt
1 oz Pecans, Chopped or Cookie Pieces (About 1/4 C)
1 Medium Apple, Cored and Chopped***
Nutmeg, to Taste
Cinnamon, to Taste
Honey

Combine yogurt, apple, cinnamon, and nutmeg. Stir well to combine.

Add cereal and cookie pieces. Stir a very SMALL amount--you don't want your cereal getting soggy.

Add a little honey for some sweetness.

Clean Out The Fridge Pasta

(you could probably make chicken noodle soup from this too)

1 (14 oz) PKG Whole Wheat Pasta
1 LB Chicken, Cut into Bite Size Pieces
4-5 Cups of whatever veggies you have in your fridge***

cook pasta according to package directions. In another large dutch oven, or stock pot, combine chicken, veggies, and enough water to cover.

Drain pasta and let sit. In the pan the pasta was in, combine 1/4 C olive oil and 1 t crushed red pepper. Saute until fragrant, turn off heat. Add pasta and stir well to combine.

Drain chicken and veggies and let set. in the pan the paseta was in, combine 1/4 C olive oil and 1 t crushed red pepper. Saute until fragrant, turn off heat. Add chicken and veggies and stir well to combine.

Combine pasta and chicken. Makes 4 servings.

***Veggies I used***
1 C Frozen Peas
1 C Frozen Carrots
3 Medium Celery Stalks
1/2 C Sliced Mushrooms
1 Can Corn (about 2 cups)

Tuna Veggie Casserole

1 Can Tuna
1 Slice Bread, Toasted and Chopped into Crumbs
1 Egg
1/2 C Chopped Mushrooms
1/2 C Chopped Broccoli
1/2 C Peas
1/2 C Chopped Carrot
1 Celery Stalk Chopped
1/2 C Parmesan, Divided
1/4 C Basic Salad Dressing

In a large bowl combine tuna, bread, egg, mushrooms, broccoli, peas, carrots, celery, and 1/4 C Parmesan. Mix well.

Saute mixture in a pan, and pour 1/4 salad dressing over the top while cooking. Stir occasionally until heated through. Top with remaining 1/4 C Parmesan.

Basic Salad Dressing

1/2 C Olive Oil
1/2 C White Distilled Vinegar
1 T Black Pepper
1 t Crushed Red Pepper

Heavenly Baked Sweet Potato

1 Large Baked Potato
2 T Butter
Ginger
Cinnamon
Pecans
Honey

MAKES TWO SERVINGS!

Wash and prick sweet potato. Wrap in foil. Bake in 350F oven for about an hour. Unwrap from foil and split lengthwise down the center.

Fluff up the inside, then add 1 T Butter to each half. Add ginger, cinnamon, pecans, and drizzle with honey.

Baked Salmon

2 Cloves Minced Garlic, About 1 t
1/4 C Light Olive Oil
1 t Basil
1 t Black Pepper
1 T Lemon Juice
12 oz Salmon Fillets

Combine all ingredients in a zip block bag and let marinate for as long as possible...preferably an hour.

Preheat oven to 375F. Transfer contents of zip lock bag to a baking dish. Cover with foil and bake for about 45 minutes. Give the pan a good shake about halfway through cooking.

Baked Chicken



4 Boneless Skinless Chicken Breasts
1/4 C Butter
1 t Seasoned Salt***

Preheat oven to 400F. In a baking dish that can hold the chicken, melt butter and stir in seasonings. Mix well. Add chicken to pan and coat well. Baking for about 40 to 50 minutes. Don't over cook so the chicken is juicy.

*** Next time I plan on making my own special blend based on Lawry's seasoned salt, but I'm going to omit the salt.

Kittencal's Taco Seasoning Mix


2 T Chili Powder
1 t Garlic Powder
1/4 t Onion Powder
1/4 t Dried Oregano
1/2 t Paprika
3 t Cumin
1 t Black Pepper
1 Pinch Cayenne Pepper, to taste

Tuna-Patty Burgers

About 2 T Bread Crumbs*

Combine all ingredients and mix well. Shape into Patties and pan fry.

* - due to regular bread crumbs containing a TON of additives, I've decided to toast a piece of Ezekiel bread or Pita bread and use that as crumbs.

** - I used 1 Celery stalk in this, but i think green onion would also be really good. Carrot is a bit high in carbs so you might want to avoid it since there is bread in the patties and you'll also be eating bread with it most likely.

Taco-Filled Peppers

1LB Ground Beef/Turkey
1 Packet Taco Seasoning
1 Can Kidney Beans, Rinsed and Drained
1 C Salsa
4 Green Peppers
Chopped Tomato, Cheddar, and Sour Cream, Optional

In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, kidney beans and salsa. Bring to a boil; reduce heat and simmer for 5 minutes.

Cut peppers in half lengthwise; remove stems and discard seeds. In a large kettle, cook peppers in boiling water for 3-5 minutes. Drain and rinse in cold water.

Spoon about 1/2 cup meat mixture into each pepper half. Place in an ungreased 13-in. x 9-in. baking dish. Cover and bake at 350° for 15-20 minutes or until the peppers are crisp-tender and filling is heated through.

Top each with tomato, cheese, and sour cream.

Traditional Beef Stew

1 Pound Beef Stew Meat, cut into 1-inch cubes
1 pound fresh baby carrots
2 medium potatoes, cut into chunks
2 medium onions, cut into wedges
1 Can Diced Tomatoes
1 Can Beef Broth
2 T quick-cooking tapioca
1 t Worcestershire sauce
1/4 t salt
1/4 t pepper

In a 3-qt. slow cooker, combine all the ingredients.

Cover and cook on low for 8-10 hours or until meat and vegetables are tender.

Pork stew meat also works well in this dish.

Note to Self: Try with Sirloin Tips.

Stroganoff Casserole

1 (16 oz) PKG Egg Noodles
2 (10.75 oz) Cans Mushroom Soup, Undiluted
1 C Sour Cream
1/2 C Milk
1 LB Lean Ground Beef/Turkey
2 (6 oz) Cans Mushrooms, Drained
1 (8 oz) PKG Cream Cheese
1 (1 oz) PKG Gravy Mix

Prepare noodles according to package directions. Drain. Return pan to stove.

Meanwhile, cook ground beef in large skillet over medium-high heat until no longer pink. Drain fat. Add mushrooms, cream cheese, and gravy mix to beef. blend well.

Combine mushroom soup, sour cream, and milk. Whisk to blend. Add noodles and stir well to combine.

Add beef mixture to noodle mixture, and mix well. Serve warm and bubbly.

Chicken Alfredo Biscuit Casserole

1 (8 oz) PKG Sliced Mushrooms
1 Medium Onion, Chopped
Black Pepper
1 (16 oz) Jar Alfredo Sauce
1/4 C Milk
1 Can Cooked Chicken, Drained
2 C Frozen Broccoli
1/4 t Basil
Buttermilk Biscuits

Prepare biscuits according to package directions.

Meanwhile, saute mushrooms and onion in water, with black pepper, until tender, fragrant, and brown around the edges. Add remaining ingredients, except for biscuits, and warm through until bubbly.

Biscuit and Sausage Bake

For this recipe I didn't measure my blueberries. The batter was so stiff that I basically had to knead the blueberries and dough together. I had a package leftover in the freezer so I dumped them all in. Aldi's carries a Brown and Serve package of sausage links for 79 cents. 7 in the box. I cooked them in a little water and then chopped them up and sprinkled on the top. You could probably just as easily crumble cooked sausage on top if you wanted. The recipe also said it only needed 22 minutes to bake. I'm not sure what happened, but I probably ended up baking this for 40 minutes. I'd keep an eye on it, and adjust as needed after the 22 minutes.

2 C Baking Mix (Bisquick, Jiffy, etc)
1/2 C Milk
1 Egg
1 t Vanilla Extract
1 C Fresh or Frozen Blueberries
6 Fully Cooked Sausage Links, Chopped
Maple Syrup

Preheat oven to 350F. Combine baking mix, milk, egg, and extract. Batter will be very stiff. Mix in blueberries. Transfer to a sprayed 8x8 baking pan. Sprinkle sausage on top. Bake until lightly browned on top. Serve with maple syrup.

Thai Peanut Chicken and Noodles

I ended up using 12 oz of regular wide egg noodles. Didn't want to waste and Alid's only carried the wide version. I substituted ground ginger for the gingerroot, which also seemed okay. Next time I'm going to double the peanut butter sauce and leave out the carrots. I cooked the dish for a long time, but never really got the carrots soft like I like them. I also ended up using two cans of cooked, cubed, chicken which turned out fine. Didn't use the peanuts or cilantro.

8 oz Uncooked Pasta (224g)
1/2 C Creamy Peanut Butter
1 t Ground Ginger
1 t Red Pepper Flakes
1/4 C Soy Sauce
3/4 C Water
16 oz Frozen Mixed Stir fry Veggies
16 oz cooked chicken or turkey

Prepare noodles according to package direction. Drain--leave in colander and return pan to stove.

Meanwhile, combine peanut butter, ginger, red pepper flakes, 1/4 C Soy sauce and beat with a wire whisk or fork until smooth and creamy. Add remaining soy sauce and water and mix well to combine.

In reserved pan, saute broccoli, mushrooms, and pepper until desired tenderness is reached. Add noodles, chicken, and peanut butter sauce to pan. Mix well and heat through.

Banana Pudding

This recipe calls for a lot of stirring. I'd highly recommend a hand-held mixer.

2 (7 1/4 ounce) bags Pepperidge Farm Chessmen Cookies
2 cups milk
1 (5 ounce) box French vanilla instant pudding***
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed or sweetened whipped cream+++

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top. In a bowl, combine the milk and pudding mix and blend well using a hand held electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth.

Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Crush the second bag of cookies. Gently mix in half the cookie bits into the pudding mixture. Pour the mixture over the cookies and bananas.

Top with remaining crushed cookies. Refrigerate until ready to serve.


*** if you can't find 5 oz box, use a 3.5oz and a 1.75oz together with 2 cups of milk.
+++ I could never find a 12 container, so I ended up using an 8 oz.

Egg Salad Sandwiches

1 cup Miracle Whip
1/4 teaspoon salt

Foolproof Hard-Boiled Eggs

1 Dozen Eggs

Place eggs in medium saucepan, cover with 1 inch of water, and bring to a boil over high heat. Remove pan from heat, cover, and let sit for 10 minutes. Drain. Place in iced water to cool for about 5 minutes. Tap each egg all over against countertop to crack shell, then roll egg gently back and forth several times. Shell should come off easily.

The funny thing about this recipe is that the taste of home recipe in the book doesn't match the recipe on the website--even though the photo is the same. 1 (14.5 oz) Can Diced Tomatoes, Drained
½ C Onion, Chopped
4 t Minced Garlic
1 t Salt, Divided
½ t Oregano
½ t Chili Powder
3 to 4 lbs Chicken***
3 T Oil, Divided
1-1/2 C Uncooked Long Grain Rice
3 C Chicken Broth
1 Can Peas, Drained
Sour Cream & Cheese, Optional

Mix together tomatoes, onion, garlic, ½ t salt, oregano, chili powder, and ¼ t pepper until smooth. Sprinkle chicken with remaining salt and pepper. In a large skillet over medium heat, cook the chicken in batches in 2 T oil for 10 minutes or until lightly browned. Remove and keep warm.

In the same skillet sauté rice for 2 minutes or until lightly browned. Stir in broth. In a dutch oven, heat the remaining oil. Add tomato mixture. Bring to a boil, cook and sti for about 4 minutes. Stir in rice mixture; bring to a boil.

Arrange chicken in pan. Reduce heat to medium. Cover and cook for 25-30 minutes or until rice is tender and chicken juices run clear. Stir in peas. Cover and let stand for 4 minutes or until peas are heated through.

Top individual servings with sour cream and cheese if desired.

*** I really think I would have liked this recipe better if I'd used boneless skinless chicken breast or tenderloin. I really don't like the skin and fat (not to mention bones) of regular chicken. Unfortunately buying 4 pounds of chicken breast and cutting it into bite size pieces is a bit on the expensive side, so perhaps next time I will make half a batch.

Three Cheese Chicken Bake

1LB Chicken Breast/Tenderloin, Cut into Bite Size Pieces
1 Small Onion, Chopped

1 (8 oz) Can Mushrooms, Drained
1 (2 oz) Jar Pimentos, Drained
1/2 t Dried Basil
1 (15 oz) Container Ricotta Cheese
1 (8 oz ) PKG Shredded Cheddar Cheese
1/2 C Grated Parmesan Cheese
1/4 C Buttered Breadcrumbs, Optional

Prepare pasta according to package directions in a dutch oven. Drain pasta, reserve dutch oven.

IF USING BREADCRUMBS, preheat oven to 350F.

In a skillet, saute chicken, onion, and green pepper in a little olive oil until chicken is well done and vegetables are tender. Transfer the chicken and veggies to the dutch oven the pasta was cooked in. Add soup, mushrooms, pimentos, and basil. Mix well. Add cheese. Mix well. Add pasta and mix well. Warm through.

IF USING BREADCRUMBS, transfer mixture to a lightly oiled 13x9 baking dish or foil pan. Sprinkle with buttered bread crumbs and bake for 15 minutes, uncovered.

Creamy Ham Fettuccine

Tortellini Marinara

1 pound bulk Italian sausage (italian turkey sausage also works well)
1 package (15 ounces) refrigerated marinara sauce
1 can (14-1/2 ounces) diced Italian tomatoes, undrained
1/2 pound sliced fresh mushrooms (baby bell mushrooms work well)
shredded part-skim mozzarella cheese
Garlic Bread

Cook tortellini according to package directions. Meanwhile, in a large skillet, cook sausage and mushrooms over medium heat until sausage is no longer pink; drain. Stir in marinara sauce and tomatoes.

Drain tortellini; stir into skillet. Warm through.

Top each serving with mozzarella cheese

2 1/2 lbs red potatoes, unpeeled,quartered
3 cloves garlic, peeled
2 tablespoons butter
1/2 cup milk
1 teaspoon salt
1/4 cup grated parmesan cheese

Put potatoes and garlic in lg pan. Cover with water. Bring to a boil. Reduce heat and simmer for 25 minutes, until potatoes are tender. Drain well. Mash with the butter, milk, and salt. Stir in the parmesan cheese.

Whole Wheat Pancakes

Please note this recipe uses whole wheat flour, unlike the original recipe.

1 egg
1 cup whole wheat milk
2 tablespoons margarine, melted
1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt

Beat egg until fluffy. Add milk and melted margarine. Add dry ingredients and mix well. Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel. The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan. Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon. When bubbles appear on surface and begin to break, turn over and cook the other side.

Pork Chops Yum-Yum

4 Thin Pork Chops Totaling 8oz (1/2LB)
1/4 C Chicken Broth
1/8 C Honey
1/8 C Soy Sauce
1 T Ketchup
1/4 t Ginger
1/4 t Garlic Salt

Brown chops on both sides. Place in greased casserole dish. Mix all remaining ingredients and pour over pork chops. Bake, uncovered, at 350 for one hour. Simple!

Sour Cream Mushroom Rice

Sausage Gravy

1 lb pork sausage
1/3 cup flour
1 quart milk
1 dash pepper
1 Batch of Great Aunt Norma's Biscuits

Cook sausage in skillet. Drain Fat. Sprinkle flour over sausage and stir well. Cook flour and sausage together for about 5 - 7 minutes. Add milk. Cook over medium heat until thickened. Add pepper. Serve over biscuits.

Easy Italian Chicken

4 boneless skinless chicken breast halves (4 ounces each)
1 can (14-1/2 ounces) Italian stewed tomatoes
1 can (4 ounces) mushroom stems and pieces, drained
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1 tablespoon cornstarch
1/3 cup cold water
Hot cooked spaghetti

In a large skillet coated with cooking spray, cook chicken for 5-6 minutes on each side or until the juices run clear.

Meanwhile, in a saucepan over medium heat, combine the tomatoes, mushrooms, basil and garlic powder; bring to a boil. Combine cornstarch and water; gradually add to tomato mixture. Cook and stir for 2 minutes or until thickened. Serve chicken with spaghetti; top with tomato sauce.

Christmas Cauliflower

1 large head cauliflower, broken into florets
1/4 cup diced green pepper
1 jar (7.3 ounces) sliced mushrooms, drained
1/4 cup butter, cubed
1/3 cup all-purpose flour
2 cups milk
1 cup (4 ounces) shredded Swiss cheese
2 tablespoons diced pimientos
1 teaspoon salt
Paprika, optional

In a large saucepan, bring 1-in. of water and cauliflower for to a boil. Reduce heat; cover and cook for 5-15 minutes or until crisp-tender; drain and pat dry.

Meanwhile in a large saucepan, saute green pepper and mushrooms in butter for 2 minutes or until crisp-tender. Add flour; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Add pimientos and salt.

Place half of the cauliflower in a greased 2-qt. baking dish; top with half of the sauce. Repeat layers. Bake, uncovered, at 325° for 25 minutes or until bubbly. Sprinkle with paprika if desired.

Pecan Pie

3 Eggs
1 C Corn Syrup
1 t Vanilla Extract
2/3 C Sugar
1/3 C Butter, Melted
Pie Crust
1-1/4 C Pecan Halves, optional

Preheat oven to 350F. Beat eggs until combined. Stir in corn syrup, sugar, butter, and vanilla extract. Stir Well Stir in pecan halves (if using them) and pour filling into pie crust.

With pecans - bake 45 minutes.

Without pecans - bake 1 hour.

I often make this without pecans because Ryan isn't fond of them.

Meatloaf

3LB of Ground Beef (27% Fat) or Ground Chuck (20% Fat)***
2 Eggs
2 Small Onions, Finely Chopped
2t Salt
1t Pepper
1/2 C Organic Heinz Ketchup**
1 C Half & Half
6 T Cornmeal

Sauce
1/2 C Apple Cider Vinegar
1/4 C Brown Sugar
1 C Organic Heinz Ketchup**

Preheat oven to 350F. Combine meatloaf ingredients in a large bowl. Transfer to pan and pat down. Take a spatulate and go along the edges, this will make getting the meatloaf out of the pan easier.

Combine sauce ingredients and pour over top and sides. Bake for 1hr to 1hr15 minutes or until the center is pink and the temp is around 170F in the center.

*** DO NOT BUY EXTRA LEAN CUTS OF MEAT!!! Do this and your meatloaf is going to be dry and tasteless. Trust me.

** I used organic ketchup because regular plain ole ketchup is loaded with high fructose corn syrup and additives.

Fried Broccoli

3 Cups Frozen Broccoli, Thawed.
1-2 Pinches Rosemary
2 T Olive Oil
1/2 C Breadcrumbs
Black Pepper

Heat olive oil in a pan. Add rosemary and saute until it smells pungent. Add broccoli and pepper. Saute until the broccoli is nearly done (to your taste), then pour the bread crumbs in and stir. The crumbs will stick to the brccoli. Once most of the crumbs are in the broccoli, saute for a few more minutes to brown the breadcrumbs and broccoli.

Tuna Casserole

3 C Uncooked Egg Noodles (528 Calories)
1 (10.5 oz) Can Cream of Celery Soup (250 Calories)
1/2 C Light Miracle Whip (160 Calories)
3/4 C Evaporated Mllk (225 Calories)
1 (4 oz) Can Mushrooms, Drained (30 Calories)
1 t Black Pepper
1 (7 oz) Can Tuna in Water (225 Calories)

Cook egg noodles. While egg noodles are cooking, combine remaining ingredients and mix until smooth.

Drain egg and return to pan. Add in remaining ingredients and warm through, about 10 minutes.

Spicy and Sweet Pork Chops

2 Boneless Pork Chops
3 T Water
2 T Minced Garlic
3 T Jam, Any Flavor
1 C Salsa
1 t Seasoned Salt

Combine water, garlic, jam, salsa, and seasoned salt until mixed well. Add to pan and warm.

Cut small slits into pork chops and to pan. Spoon sauce mixture over pork chops, and simmer for about 10 minutes. Make sure sauce does not burn.

Turn pork chops over, spoon more sauce on them, and let cook for an additional 10 minutes or until done, flipping every 10 minutes.

Make sure sauce doesn’t burn!

Peach Chicken and Stuffing

2 Boneless Skinless Chicken Breasts, Halved or Cubed
1 Large Can Peaches in Heavy Syrup
Cinnamon
Nutmeg

1 Box Cornbread Stuffing
1 Mini 1.5oz Box Raisins
1/2 t Oregano
1/2 t Basil
1/2 t Sage
Chopped Onion, Optional

Preheat oven to 350F.

Place chicken breast in a square baking pan. Drain syrup off peaches and pour over chicken. Sprinkle with cinnamon and nutmeg. Turn chicken over and sprinkle with additional cinnamon and nutmeg. Cover and bake for 20 minutes. Pour peaches over chicken, cover and bake for an additional 20 minutes or until chicken is done.

Prepare stuffing according to package directions. I like adding in the other items on the list.

Serve chicken with stuffing!

Denny's-Style French Toast

1 T Milk
1 T Whole Wheat Flour
1/4 t Vanilla Extract
1/2 t Cinnamon
1/4 t Nutmeg
2 Slices Bread
Olive Oil

Combine Egg, Milk, Flour, Vanilla Extract, Cinnamon, and Nutmeg in a shallow dish.
Saturate bread with mixture. Cook in a cast iron pan with a little olive oil.

Serve with peanut butter, honey, or fresh fruit.

Country Fried Steak

1 C Flour
1 T Salt
2 t Pepper
1 T Ground Mustard
2 T Paprika
1 T Garlic Powder
1/2 t Ground Ginger
1/4 t Thyme
1/4 t Basil
1/4 t Oregano
1 C Milk
1 Egg
Round Steak, Cube Steak, Chicken, or Pork Chops, etc.
Oil For Frying
Gravy, Optional

Combine flour, salt, pepper, ground mustard, paprika, garlic powder, ginger, thyme, basil, and oregano in a shallow pie dish. Mix well.

Combine milk and egg in a separate dish and mix well.

Heat about 1/4 inch of oil in a skillet, on medium high heat.

Dredge meat through flour mixture, then in milk mixture, then in flour mixture again. Cook for 10 minutes in oil. Flip, and cook for an additional 5 minutes or until done.

Serve with gravy if desired.

Should Be Illegal Oven BBQ

3-4 Chicken Breasts OR
2 Pork Steaks OR
1/2 Rack Ribs OR
6 County Style Ribs + 4 Drumsticks

1/2 C Honey
1/3 C BBQ Sauce
1/2 t Paprika
1/2 t Chili Powder
1/4 t Garlic Powder
1 T Old Bay Seasoning
1/4 t Onion Powder
1/4 t Celery Salt
1/4 t Black Pepper
2 T Sugar
1/4 C Brown Sugar

Combine everything but the meat in a small bowl and mix until smooth.

Place meat in the bottom of a foil lined Lasagna pan. This dish gets messy so use foil for easy clean up.

Pour the sauce over the meat and coat evenly using your hands. Cover with more foil.

Bake in 375F oven for 1 hour, turning the meat over every 15 minutes and stirring the sauce a bit so it doesn't burn.

If the sauce seems a little thin, and not like a glaze, then pour it into a skillet and heat it on high until it thickens.

I've added the sauce into canned baked beans which also goes well this dish.

1 C Salsa
1/2 C Water
1 Can Corn
3/4 C Uncooked Rice

Caramelized Chicken Wings

3 lbs chicken wings
2 tablespoons olive oil
1/2 cup soy sauce
2 tablespoons ketchup
1 cup honey
1 garlic clove, minced, to taste
1 pinch salt
1 pinch ground black pepper

Preheat oven to 375°F. Place chicken in a 9x13-inch baking dish. Mix the oil, soy sauce, ketchup, honey, garlic, salt and pepper and pour over the chicken. Bake for one hour or until sauce is caramelized.
