2 Tuna Steaks
1 T (.5 oz) Canola Oil
Kosher Salt, to taste
Black Pepper, to taste
Dried Rosemary, to taste
Place tuna steaks on a plate. Drizzle with oil and coat both sides well. Season one side of tuna steak with salt, pepper, and rosemary.
Preheat pan over medium high heat. Place seasoned side down in pan. Season other side. Cover with lid and cook until nearly done. Flip and finish cooking. Let rest a few minutes before eating.

Super Simple Salmon

4 (4 oz) Salmon Fillets
1 T (.5 oz) Canola Oil
1 T Garlic Powder
1 T Dried Basil
1/2 t Salt
Place salmon fillets, skin side down on a plate. Drizzle with oil and coat both sides well. Mix together garlic powder, basil, and salt. Sprinkle liberally over just the top of the salmon
Heat a pan over medium high heat for about 5 minutes. Place salmon in pan and cook for 3-4 minutes, skin side down. DO NOT MOVE SALMON. When skin side has browned, flip over seasoned side down. With some tongs, peel the skin off the salmon. Gently rub any gray colored meat off with the tongs since it has a fishy taste. Put remaining seasoning/rub on the now skin-free side.
Turn heat down, cover with lid, and cook salmon until golden brown. Flip and cook an additional 3-4 minutes to brown the other side. Let sit a few minutes before serving.
Barbie's Tuna Salad

7 oz Tuna in Water, Drained and Flaked
1/3 C Mayo
1 T Parmesan Cheese
3 T Sweet Pickle Relish
1/4 t Onion Flakes
1/4 t Curry Powder
1 t Dill Weed
1 Pinch Garlic Powder
Combine everything but tuna in a bowl, until smooth. Add tuna and mix well. Chill.
Asian Ginger Mahi Mahi

1LB of Mahi Mahi, or other Fish
3 T Soy Sauce
1 T Minced Garlic
3 T Balsamic Vinegar
2 T Olive Oil, Divided
1 T Honey
1/2 t Ground Ginger
Hot Cooked Rice & Crunchy Sauted Vegetables
To make marinade mix together soy sauce, garlic, vinegar, 1 T oil, honey, and ground ginger in a dish or ziplock bag. Add fish. Let marinate for at least 30 minutes. Reserve marinade
Start rice, if you're going to cook it. Cook fish in 1 T of oil in pan, add small amounts of marinade as needed so fish does not stick and burn. Remove fish from pan, cover, and keep warm. Add veggies and leftover marinade to pan. Turn up on high heat and cook, stirring occasionally, until the marinade glazes over.
Serve fish with Veggies and rice. Yum!
Tuna Veggie Casserole
1 Can Tuna
1 Slice Bread, Toasted and Chopped into Crumbs
1 Egg
1/2 C Chopped Mushrooms
1/2 C Chopped Broccoli
1/2 C Peas
1/2 C Chopped Carrot
1 Celery Stalk Chopped
1/2 C Parmesan, Divided
1/4 C Basic Salad Dressing
In a large bowl combine tuna, bread, egg, mushrooms, broccoli, peas, carrots, celery, and 1/4 C Parmesan. Mix well.
Saute mixture in a pan, and pour 1/4 salad dressing over the top while cooking. Stir occasionally until heated through. Top with remaining 1/4 C Parmesan.
Baked Salmon

2 Cloves Minced Garlic, About 1 t
1/4 C Light Olive Oil
1 t Basil
1 t Black Pepper
1 T Lemon Juice
12 oz Salmon Fillets
Combine all ingredients in a zip block bag and let marinate for as long as possible...preferably an hour.
Preheat oven to 375F. Transfer contents of zip lock bag to a baking dish. Cover with foil and bake for about 45 minutes. Give the pan a good shake about halfway through cooking.

1 Can Tuna, Drained
1 Egg
About 2 T Bread Crumbs*
Parmesan Cheese
Fresh Black Pepper
Minced Celery, Onion, or Carrot**
Combine all ingredients and mix well. Shape into Patties and pan fry.
* - due to regular bread crumbs containing a TON of additives, I've decided to toast a piece of Ezekiel bread or Pita bread and use that as crumbs.
** - I used 1 Celery stalk in this, but i think green onion would also be really good. Carrot is a bit high in carbs so you might want to avoid it since there is bread in the patties and you'll also be eating bread with it most likely.

1 (10.5 oz) Can Cream of Celery Soup (250 Calories)
1/2 C Light Miracle Whip (160 Calories)
3/4 C Evaporated Mllk (225 Calories)
1 (4 oz) Can Mushrooms, Drained (30 Calories)
1 t Black Pepper
1 (7 oz) Can Tuna in Water (225 Calories)
Cook egg noodles. While egg noodles are cooking, combine remaining ingredients and mix until smooth.
Drain egg and return to pan. Add in remaining ingredients and warm through, about 10 minutes.
