Lemon Meringue Pie

1  Store Bought Pie Crust, from the freezer section
1 Can Lemon Pie Filling
4 Egg Whites (6.5 oz)
1/4 t Cream of Tartar
1/2 C Sugar

Bring egg whites up to temp in clean and dry kitchen aid bowl for 30 minutes.
Thaw store bought pie crust on counter for 15 minutes, then prick with a fork. Bake pie crust according to package directions. Heat up lemon pie filling on the stove
While pie crust is baking and lemon filling is warming up, make the meringue. 
To the egg whites add the cream of tartar. Turn on kitchen aid (youtube video showed setting 4, but my setting 4 seemed slower than theirs so I did setting 10). Using the wire whip attachment, mix the egg whites until the are white and frothy.  (1 minute?) 

Then add sugar one spoonful at a time. I counted 3 seconds between spoonful's.  

The first stage you will see is foam. It's liquid and looks like foam. keep whipping!
The second stage will look lots of tiny little bubbles and heavy whipping cream. keep whipping!
next stage is soft peaks. dip the spoon in, turn over, and it will create a peak that flops over
next stage is firm peaks. dip the spoon in, turn it over, and it will create a peak that flops over just a tiny bit
stiff peaks, the peak will stand up straight and will not flop over at all

when it is ready, you will be at stiff peaks. it will look glossy, and if you feel it there will not be any grittiness from sugar. according to the 4th video you cannot over whip meringue.

Pull the pie crust out of the oven, add in the hot lemon pie filling. top the pie with meringue, starting around the outter edge. The meringue needs to come into contact with the pie crust to seal it in.
Make some pretty curlyqs in with a spoon, then bake in a 325 oven for 20 minutes.

Chocolate Coconut "Mounds" Porridge

1 1/2 C Water
1/2 t Salt
1 C teff
Maple Syrup, to taste
Cocoa Powder, to taste
Unsweetened Coconut, to taste
 
Rinse and drain teff. Combine water, salt, and teff in a sauce pan. Cover and cook for 15-20 minutes or until water is absorbed. Remove from heat and let sit covered for 10 minutes.

Fill the sugar cone with layers of chocolate chips and mallows. Place in jalapeno popper pan.

Cook in 275F traeger for 5-7 minutes, or until bubbly.

Yeast-Free Cinnamon Rolls

3/4 C Flour
2 T Sugar, Divided
1/2 t Baking Powder
1/4 t Baking Soda
1/8 t Salt
5 T (2.5 oz) Milk
4 T Butter, Divided
1 t Apple Cider Vinegar
3 T Brown Sugar
1 t Ground Cinnamon

Preheat oven to 375F and spray muffin pan with non stick spray. We will use only 8 of the cups.

Mix flour, 1 tablespoon white sugar, baking powder, baking soda, and salt together in a bowl.

Melt 2 T butter in microwave. Add milk and apple cider vinegar. Mix well. Pour over the flour mixture. Mix well until a soft dough forms.

Dust a flat work surface with flour. Roll dough out to a 6x7-inch rectangle. Spread remaining 2 tablespoons butter on top.

Mix remaining 1 tablespoon white sugar, brown sugar, and cinnamon in a small bowl. Sprinkle evenly over the buttered dough.

Roll up lengthwise into a log. Cut into 8 pieces using a knife. Place 1 piece into each muffin cup.

Bake for 13-15 minutes or until golden. Top with icing if desired.

Chocolate Crazy Cake

1 1/2 C Flour
1/3 C Cocoa Powder
1/2 to 3/4 C Sugar
1 t Baking Soda
1/2 t Salt
1 t Vinegar
1 t Vanilla Extract
1/3 C Oil
1 C Water
Whipped Cream or Powdered Sugar, optional

Preheat oven to 350F. Grease an 8-inch square pan with butter. In the greased pan, combine the flour, cocoa powder, sugar, baking soda, and salt. Whisk lightly with a fork or small whisk to combine.

Make two small wells and 1 large well in the dry ingredients (as pictured) and add the vinegar, vanilla, and oil to the wells. Pour the water over the top and whisk again to combine thoroughly.
Bake for 30 minutes, until a toothpick inserted comes out clean.

Top with whipped cream or powered sugar

Snickerdoodle Crazy Cake

1 1/2 C Flour
1/4 C Brown Sugar
1/4 C Sugar
2 t Cinnamon
1 t Baking Soda
1/4 t Salt
1/3 C Vegetable Oil
1 t Vanilla Extract
1 t Apple Cider Vinegar
1 C Water

Grease an 8x8 pan with butter.

In the pan mix together the flour, sugar, brown sugar, cinnamon, baking soda, cream of tartar, and salt.

Make three depressions or wells in the dry ingredients, two small, and one large. Add the vinegar in one small well, vanilla in the other, and vegetable oil in the large one. Pour 1 cup water over the top and mix until smooth.


Bake in 350F oven for about 30 minutes, or until a toothpick comes out clean.

If desired, sprinkle with additional cinnamon/sugar immediately after pulling the cake out of the oven while it is still hot

Three Ingredient Lemon Bars

1 PKG Angel Food Cake (Just Add Water Kind)
1 (21 oz) Can Lemon Pie Filling
1 oz Lemon Juice
Powered Sugar, Optional

Combine all ingredients and mix well until no lumps.
Transfer to a sprayed lasagna pan
Bake in 350F oven for 30 minutes or until toothpick comes out clean
Dust with powered sugar if desired.

Penzey's Hot Chocolate for One

2 C Milk
1 1/2 T Sugar
1 1/2 T Cocoa Powder
1 pinch Cinnamon, Optional
1/4 t Vanilla Extract, Optional
Mini Marshmallows, Optional

Combine milk, sugar, cocoa powder, and cinnamon in a sauce pan. Whisk until smooth and heated through. Remove from heat and whisk in vanilla extract. Top with mini marshmallows if desired.

No Bake Cookies







1 Stick (8 T) Butter
1 1/2 C Sugar
1/4 C Cocoa Powder
1/2 C Chocolate Milk (I like Shatto)
1/2 t Salt
3 C Quick Cooking Oats
1/2 C Peanut Butter
1 t Vanilla Extract

Line a spring form pan with wax paper.

In a sauce pan melt the butter. Stir in sugar, cocoa powder, milk, and salt. Boil rapidly for 1 minute and 30 seconds. Remove from heat. Stir in oatmeal, peanut butter, and vanilla extract. Mix well.

Quick transfer to the spring form pan and smooth out. Chill and cut into wedges to serve.

Cinnamon Stove-top Apples

4 Apples, Cored and Diced (no need to peel)
Lemon Juice, to taste (water works OK too)
Cinnamon to taste
1 T Cornstarch

Combine apples, lemon juice (or water), and cinnamon in a sauce pan. Cover and cook over medium heat until the apples begin to soften, about 15-20 minutes. Sprinkle cornstarch on and mix well. Cover and cook another 5-10 minutes or until very thick.

Cinnamon Honey Baked Pears

Wash and dry pears. Cut off the top and bottom, then cut in half. Using a sturdy spoon, scoop out the stem and seeds.

Place cut side up in a pan. Drizzle each pear with a little honey then sprinkle with cinnamon.

Bake in 350F oven for about 30-45 minutes, or until soft. Goes great with Vanilla Ice Cream

Healthy Cherry Pie Filling

2 (12 oz) Bags Dark Sweet Cherries
1 oz Honey
1 Pinch Sea Salt
1/4 t Apple Cider Vinegar
1/2 t Almond Extract
2 T Corn Starch

Combine everything but the cornstarch in a medium sauce pan. Bring to boil, then simmer uncovered for about 10 minutes or until very soft. In a small bowl, combine cornstarch and 1/4 C of the juice from the sauce pan until smooth. Pour slurry into pan and simmer to thicken.

Easy Pecan Pie

3 Eggs
1 C Dark Maple Syrup
1 C Brown Sugar
2 T Butter, Melted
1 t Vanilla Extract
2 C Pecans, halved
1 (9 inch) Pie Crust, Unbaked

Combine eggs, maple syrup, brown sugar, butter, and vanilla extract. Mix until smooth. Stir in pecan halves. Pour into pie crust. Bake in 350F oven for 50-55 minutes or until toothpick comes out clean.

Roasted Cinnamon Apple Slices

5 Gala Apples, each cut into 8 Slices
1/4 C Splenda
1 T Cinnamon

Preheat oven to 400F.

Combine all in a ziplock bag and mix well.  Transfer to large foil pan and bake at 400F for 35 minutes or until apples reach desired softness.


8 apple slices = 100 Calories.

Cherry Mousse




1/2 C Water
1 PKG Sugar Free Cherry Jello
1 (8 oz) PKG Cream Cheese, Room Temp
1-1/4 C Heavy Whipping Cream
2 T Splenda
1/4 t Almond Extract

Place bowl, beaters, and heavy whipping cream in freezer to chill.

Microwave water for 1 minute and 30 seconds, or until boiling. Add jello and mix well until dissolved. In another bowl, stir the cream cheese and then slowly add the jello mix. Mix until well combined and smooth.

Remove bowl from freezer. Add heavy whipping cream, splenda, and almond extract. Beat into whipped cream. Fold into jello mixture and mix well. Chill.

NOTE: this recipe is also good with Pineapple jello, coconut extract, and unsweetened coconut on top.

Peanut Butter Pie

1 (8 oz) PKG Cream Cheese, Room Temp
1/2 C Splenda
1 C Peanut Butter
1 (8 oz) Tub Cool Whip OR
1-1/4 C Heavy Cream, Whipped
1 C Milk next time?
Crust, Optional

Bring cream cheese up to room temp (or microwave for about 40 seconds) and mix with splenda. Stir in peanut butter. Fold in whipped cream and mix well. Pour into crust if desired. Chill for a few hours.

Baked Pumpkin Pie Oatmeal

1 (15 oz) Can Pumpkin
1/2 C Brown Sugar
2 Eggs
1/2 t Cinnamon
1 Pinch Cloves
1/8 t Ginger
1/8 t Nutmeg
1/2 t Salt
1 t Baking Powder
1/2 t Vanilla OR Almond Extract
1 1/2 C Milk
2 1/2 C Old Fashioned Oats
Maple Syrup and Whipped Cream, Optional


In a large bowl mix together the pumpkin, brown sugar, eggs, extract, spices, salt, and baking powder until smooth. Add in the milk and mix well. Add in the oats and mix well.

Spray an 8x8 square baking dish with non-stick spray. Pour in the mixture. Cover with foil and bake in 350F oven for 30 minutes. Remove foil and bake for another 15-30 minutes or until the custard is set and a toothpick comes out clean.

Top with maple syrup and whipped cream if desired.

Brown Sugar Buttermilk Pie

1 Pie Crust
4 Eggs
2 T Flour
1/2 t Cinnamon
3/4 C Dark Brown Sugar (light OK, but not as tasty)
1 Stick Butter, Melted
1 C Buttermilk (or 1 T Vinegar + Milk)
1/4 t Almond Extract
1/4 C Pure Maple Syrup (No Substitutes)

Press the pie crust into the bottom of a large pie plate. Sprinkle with a little flour.

Beat the eggs. Add flour and cinnamon. Mix well. Add brown sugar and mix until completely smooth. Pour in melted butter, buttermilk, almond extract, and maple syrup. Mix well.

Pour into pie plate. Bake in 325F oven (300 if oven runs hot) for 1hr - 1hr20 minutes until the custard is set and a toothpick in the center comes out clean.

Apple Crisp II

1 (3lb) Bag Apples
1 C White Sugar
1 T Flour
1 t Cinnamon
1/4 C Water
1 C Old Fashioned Oats
1 C Flour
1 C Packed Brown Sugar
1/4 t Baking Powder
1/4 t Baking Soda
1 Stick Butter, Melted (No Substitutes)

In a large bowl combine white sugar, flour, and cinnamon. Mix well. Peel, Core, and Slice the apples. Add to cinnamon sugar and mix well to coat evenly. Transfer apples to a 9x13 lasagna pan OR two square pans. Top evenly with water.

In a medium bowl, combine oats, flour, brown sugar, baking powder, and baking soda. Mix well. Add in melted butter and stir until just combined. Sprinkle evenly over apples.

Bake in 350F oven (325F if your oven runs hot) for about 45 minutes or until golden brown.

Goes well with ice cream.
