Bacon Potato Soup
1 Onion, Chopped
6 Slices Bacon
2 (14.5 oz) Cans Chicken Broth
6-8 Potatoes
8 oz Sour Cream
2 Cans Cream of Chicken Soup
Cut bacon into small strips and fry with onion. Meanwhile peel potatoes and cut into small bite size pieces. Simmer potatoes in the chicken broth until fork tender. Stir in sour cream and chicken soup. Cook on low until hot, do not boil. Remove from heat and stir in bacon/onion mixture along with drippings.

4 Bacon Strips, Sliced into Strips
1 Medium Onion, Chopped
1/2 C Ketchup
3 T Molasses
2 t Salt
1/4 t Black Pepper
1/4 t Dry Mustard
1 T Worcestershire Sauce
1/4 C Brown Sugar, Packed
2 Cans Navy Beans, Drained and Rinsed.
Saute bacon and onion until crisp. Drain and return to pan.
In a small bowl combine ketchup, molasses, salt, black pepper, dry mustard, worcestershire sauce. Mix well. Add to pan and mix well.
Add navy beans and mix well. Simmer until ready to eat.

6 Slices Bacon, Diced
2 Ribs Celery, Diced
1 Onion, Diced
1 Large Pinch Salt
1 Green Pepper, Diced
1 Red Pepper, Diced
3 Cloves Garlic, Minced
1 T Oil
1/3 C Flour
1 t Black Pepper
1 t Paprika
1/2 t Dried Oregano
1/4 t Cayenne Pepper
3 C Cold Chicken Broth
1 t Worcestershire Sauce
8 oz Andouille Sausage, Diced
3 C Cooked Shredded/Diced Chicken (2 Breasts)
Hot Cooked Rice
Green Onions for Garnish
Preheat covered pan on medium high heat for 5 minutes. Cut bacon in to small strips using scissors or a knife. Turn heat down to medium and cook until crispy. Remove from the pan with a slotted spoon and set aside.
Add celery and onion to bacon drippings. Season with salt. Cook for 5 minutes over medium heat. Add green pepper, red pepper, and garlic. Cook for 5 minutes.
Add 1 T of oil and mix well. Sprinkle over flour. Mix well to form a roux. Add black pepper, oregano, cayenne pepper, and paprika. Bring to a boil, reduce heat to low-medium and cook for 5 minutes.
Add about 1 C of the broth and stir until the lumps are out. Add remaning broth and worcestershire sauce. Cook for 5-10 minutes over low heat until thickened. Add andouille sausage, chicken, and bacon. Mix well and heat through.
Serve over rice and garnish with green onion.
Smothered Green Beans
1 LB Fresh Green Beans
1/2 LB Bacon
1 Small Onion, Chopped
1 t Minced Garlic
Salt and Pepper, To Taste
Steam green beans until tender.
Meanwhile, cook bacon, onion, and garlic. Do not drain off grease.
Drain green beans, add to bacon. Cook until the onions a caramelized and the green beans start to turn brown from frying. Salt and pepper to taste.
To Die For Blueberry Bacon Muffins
1-1/2 C Flour
3/4 C Sugar
1/2 t Salt
2 t Baking Powder
1/3 C Oil (or bacon grease, if making bacon blueberry muffins)
1 egg
Milk (see note)
1 C to 1 Pint Fresh Blueberries (NOT FROZEN!!!)
1lb Bacon, Cooked and Crumbled, Grease Reserved (Optional)
1/2 C Sugar
1/3 C Flour
4 T Butter, Room Temp
1-1/2 t Cinnamon
In a large bowl combine 1-1/2 C flour, 3/4 C sugar, 1/2 t salt, and 2 t baking powder.
In a 1 cup measuring cup add oil/bacon grease, 1 egg, and top off with milk until you have 1 cup. Add additional 1/2 C milk.
Add wet ingredients to dry ingredients and mix just until COMBINED. Do not over mix. Fold in blueberries. Fold in bacon if making blueberry bacon muffins.
Combine 1/2 C sugar, 1/3 C flour, 4 T butter, and 1-1/2 t cinnamon for crumb topping.
Line 2 pans with about 16 liners. Fill up liners about 2/3 full. Top each muffin with a small amount of crumb topping, about 1 or 2 teaspoons.
Bake in 400F oven for 20-25 minutes or until a toothpick comes out clean.

4 Large Baking Potatoes
2/3 C Butter
2/3 C Flour
6 C Milk
3/4 t Salt
1/2 t Pepper
1 (1lb PKG) Bacon, Cooked and Crumbled
1 1/4 C Shredded Cheddar Cheese
1 (8oz PKG) Sour Cream
4 Green Onions, Chopped
Wash potatoes and prick with fork. Bake at 400F for 1 hour or until done. Cut potatoes in half lengthwise and scoop out pulp, set aside.
Melt butter over low heat. Add flour, salt, and pepper. Whisk until smooth. Let sit until bubbly. Add milk a little at a time and whisk until smooth. Let cook until it gets thick and bubbly.
Add potato pulp and additional salt and pepper if needed. Stir in 2 T of green onion, 1/2 C bacon, and 1 C of cheese. Stir in sour cream and additional milk if too thick. Heat through. Garnish with remaining onion, bacon, and cheese.
Notes: This was good with 4oz of cream cheese melted in and i used as much of the bacon grease as possible rather than all the butter.
