Basic Whole Chicken in a Crock Pot



1 5lb Whole Chicken, Thawed Completely
Salt, to taste
Pepper, to taste

Remove chicken innards. Rinse inside and outside of chicken thoroughly. Season with salt and pepper on both sides. Place chicken in crock pot. Cook on high for 5hrs. Chicken will fall off the bone.

Quick Quiche

1/2 PKG Turkey Bacon
4 oz Swiss Cheese
1 T Butter, Melted
6 Eggs
1-1/2 t Salt
3/4 C Flour
2-1/4 C Milk

Preheat oven to 350F. Cook and crumble turkey bacon.

Spray a lasagna pan with non stick spray. Shred swiss cheese into pan. Add cooked turkey bacon.

In another bowl, combine melted butter, eggs, salt, flour, and milk. Mix well.

Pour egg mixture into lasagna pan with Swiss cheese and bacon. Mix gently.

Bake for about 45 minutes or until quiche is set.

Basic Pinto Beans and Rice

1LB Pinto Beans
1-1/2 C Uncooked White Rice
About 9 C Water, Divided
Butter, To Taste
Vinegar, To Taste

Combine pinto beans and 6 C water. Simmer for 1.5 hrs.

Add uncooked white rice and remaining 3 C of water. Simmer for 20-30 min or until rice is done.

Add butter and vinegar to taste.

Best Big, Fat, Chewy Chocolate Chip Cookie

1 & 1/2 Stick Butter, Melted
1 C Brown Sugar, Packed
1/2 C White Sugar
1 T Vanilla Extract
1 Large Egg & 1 Large Egg Yolk OR 2 Small Eggs
1/2 t Baking Soda
1/2 t Salt
2 C Flour
1 Bag Ghirardelli Chocolate Chips

Preheat oven to 325F.

Cream together melted butter and sugar. Add vanilla and eggs. Mix well. Add baking soda and salt. Mix well. Add flour by the spoonful (or sift). Stir in chocolate chips by hand. Place 1/4 C of cookie dough, rounded into a ball, on a sprayed cookie sheet.

Bake 15-17 minutes or until the edges are slightly toasted. Let cookies cool slightly before eating.
