Gram's Chicken Pot Pie Updated

1 LB Boneless Skinless Chicken Breast (or Ground), Cut Into Bite Size Pieces
2 T Italian Dressing
2 Cups Vegetables
1 (10.75 oz) Can Cream of Chicken Soup
4 oz Shredded Cheese or Velveeta
1 PKG Crescent Rolls or Puff Pastry

Preheat oven to 400F. (See crescent roll or puff pastry package for different temp setting)

Cook chicken in Italian dressing, until well done. Add vegetables, soup, and cheese/Velveeta. Warm through until cheese is melted. Transfer to a sprayed 9x9 square baking dish. Bake for 30 minutes TOTAL. If using crescent rolls or puff pastry, pull dish out of the oven BEFORE done, put dough on top, and return to oven to complete 30 minutes of cooking. Let sit 5 minutes to thicken before serving.

Impossible Peanut Butter Cookies

1 C Sugar
1 Egg
Sugar for Rolling, Optional

Preheat oven to 350F.

Combine peanut butter, sugar, and egg until smooth. If desired roll cookies in sugar before baking. Using a fork, press in grid shape. Bake 10-12 minutes.

8 C Water, Divided
1-1/2 C Lemon Juice

In a small sauce pan, combine sugar and 1 C water. Bring to a boil, stirring occasionally, until sugar is dissolve. Chill syrup mixture in fridge.

In a pitcher, combine lemon juice, syrup mixture, and 7 cups of cold water.

Barbie's Tuna Salad

1/3 C Mayo
1 T Parmesan Cheese
3 T Sweet Pickle Relish
1/4 t Onion Flakes

Combine everything but tuna in a bowl, until smooth. Add tuna and mix well. Chill.

Fabulous Beef Stew

2 (15 oz) Cans Diced Tomatoes
1 Packet Onion Soup Mix
1 t Minced Garlic
1 t Salt
1 t Pepper
1-1/2 t Beef Bullion Granules
1-1/2lbs Stew Meat
3-4 Potatoes, Cubed
4-5 Carrots, Sliced
1 Onion, Cut Into Wedges
2 T Cornstarch
1/4 C Water

Combine tomatoes, onion soup mix, garlic, salt, pepper, and bullion in crock pot. Mix well. Add meat, potatoes, carrots, and onion. Mix well. Cook for about 8 hours.

Transfer vegetables to a bowl. Pour juice into a pan and bring to a boil. Mix cornstarch with water until smooth. Add to juice and stir until thickened into a gravy. Add gravy back to vegetables.

Cinnamon Cookies

1/2 C Butter (1 Stick)
1 C Sugar
1 Egg
1 t Vanilla
1-1/2 t Cinnamon
1 t Baking Powder
1/4 t Salt
1-1/2 C Flour
Cinnamon Sugar For Rolling

Microwave butter for about 1 minute to melt. Stir in sugar and mix well. Add egg, mix well. Add vanilla, baking powder, salt, and cinnamon. Mix well.

Stir in flour and knead into dough. Form dough into balls and roll in cinnamon sugar.

Bake 10min @ 350F. Let stand 5 minutes before eating.

The Best One-Bowl Hash Brown Potato Casserole

1 Onion, Chopped
1 Red Pepper, Chopped
1 (4 oz) Can Mushrooms, Drained
1 (16 oz) PKG Cubed Ham, Drained
1 (10 oz) Can Cream of Mushroom Soup
3/4 C Milk
3/4 C Sour Cream
5 T Melted Butter
1 t Seasoned Salt
1 t Pepper
2 t Garlic Powder
3/4 C Grated Parmesan Cheese, Divided
2 C Grated Cheddar Cheese
2LB Frozen Hash Browns, Thawed and Drained
Additional Cheddar Cheese, Optional

Saute onion, pepper, mushrooms, and ham until vegetables are tender.

Preheat oven to 350F.

Meanwhile, in a large bowl combine soup, milk, sour cream, and butter. Mix well. Add seasoned salt, pepper, garlic powder, 1/4 C Parmesan, and cheddar. Mix well. Add vegetables. Mix well. Add Hash browns. Mix well.

Transfer mixture to a LARGE lasagna pan. Sprinkle 1/2 C Parmesan cheese over top. Bake for 40 minutes. Add additional cheddar cheese on top if desired. Return to oven and bake for additional 5 minutes to melt cheese.

Mint Limeade

1 t Baking Soda
6 Tea Bags
1 C Sugar/Sweetener
6 C Cold Water

Bring 2 C water, baking soda, and tea bags to a boil. Turn off heat and let sit 15 minutes. Add sugar/sweetener and mix until disolved. Add to pitcher and fill up with remaining water. Chill.

Crock Pot Stuffing

1 Large Onion, Chopped
1 1/2 C Celery, Chopped
1 Large Apple, Cored and Chopped
1/2 C Raisins
1/4 C Butter
1 T Sage
1 t Marjoram
1 t Salt
1 t Pepper
1/2 t Savory
1/2 t Thyme
12 C Lightly Toasted Bread Cubes or Cornbread
2 C Chicken Broth

Saute onion, celery, apple, and raisins in butter until tender. Stir in sage, marjoram, salt, pepper, savory, and thyme.

Combine bread cubes and vegetable mixture. Transfer to crock pot. Poor broth over mixture and stir well.

Cook, on high, for 1 hour. Stir. Cook additional 2 hours on low, stirring every hour. You can also cook this on high for 2 hours and it will turn out ok.

Pineapple-Black Bean Enchiladas

1 T Oil
1 Onion, Chopped
1 Red Pepper, Chopped
1 (20 oz) Can Pineapple Tidbits, Drained and Reserved
1 (15 oz) Can Black Beans, Rinsed and Drained (About 2 Cups)
1 (4.5 oz) Can Chopped Green Chilies
1 t Salt
8 oz Shredded Cheese, Divided
1 (10 oz) Can Enchilada Sauce, Divided
Flour Tortillas

Saute onion and red pepper in oil until tender. Add pineapple, black beans, green chilies, and salt. Warm through. Remove from heat and stir in 6 oz of shredded cheese.

Preheat oven to 350F.

Spread 1 T of enchilada sauce on a tortilla. Place 3/4 filling in tortilla. Place seam side down in a large 13x9 lasagna pan. Makes about 8 tortillas.

Add enough pineapple juice to enchilada sauce to fill the can back up. Mix well. Drizzle enchilada sauce over tortillas, coating thoroughly.

Spray a piece of foil with non stick spray. Place sprayed side down over tortilla mixture. Bake for 30 minutes. Remove foil and bake for another 10 minutes or until cheese is melted and bubbly.

Guacamole

4 Avocados
1/4 C Lime Juice (2 Limes)
1/2 t Black Pepper
1 t Sea Salt
2 t Minced Garlic (4 Cloves)
1/4 t Ground Cumin
1/4 t Ground Cayenne Pepper
1 Medium Tomato, Finely Chopped
1 Medium Onion, Finely Chopped

Mash avocado flesh until desired consistency is reached. Immediately stir in lime juice. Add pepper, salt, garlic, cumin, and cayenne. Mix again. Add tomato and onion. Mix well.

Crumb Topped Banana Muffins

1-1/2 C Flour
1 t Baking Soda
1 t Baking Powder
1/2 t Salt
3 Ripe Bananas, Mashed
3/4 C Sugar
1 Egg, Lightly Beaten
1/2 C Butter, Melted

Crumb Topping
1/3 C Brown Sugar
1 T Flour
1/4 t Cinnamon
1 T Cold Butter
1/3 C Walnuts

Preheat oven to 375F.

Combine flour, baking soda, baking power, and salt. Mix. In another bowl combine butter, sugar, egg, and mashed banana. Mix well. Add to dry ingredients. Mix just until moistened. Transfer mixture to a loaf pan or lined muffin pan.

Combine brown sugar, flour, and cinnamon. Mix well. Cut in cold butter until mixture is crumbly. Stir in walnuts. Spread over loaf or muffins.

If making muffins, bake for about 25 minutes or until a toothpick near the center comes out clean.

If making loaf, cover loaf for 30 minutes to prevent excessive browning of the crumb mixture. Remove covering and bake an additional 30 minutes or until a toothpick in the center comes out clean.

Chai Tea Latte

2 Celestial Seasonings Bengal Spice Tea Bags
1 t Ground Cinnamon
1/2 t Ground Ginger
1/4 t Ground Allspice

Combine water, tea, and spices. Bring to a boil. Discard tea bags. Add remaining ingredients to pan, and bring to a boil, whisking until sugar is dissolved. Serve with whipped cream and sprinkle of nutmeg.

Red White and Bacon Salad

Pecans
Walnuts
Cherry Tomatoes, Quartered
Feta Cheese, Crumbled
Grated Parmesan
Garlic Bread

Dressing
1 T Flour
1/2 C Bacon Drippings
1/2 C Vinegar
1/2 C Water
1/4 C Sugar
Salt
Pepper

Cook onion and bacon. Reserve 1/2 C of bacon drippings.

Combine all dressing ingredients. Bring to a boil, whisking constantly until thickened.

Combine salad ingredients to taste. Pour warm salad dressing over top. Serve with garlic bread.

Yummy Crunchy Caramel Apple Pie

Filling
1 C Sugar/Splenda
2 T Flour
1 t Cinnamon
1/8 t Nutmeg
1/4 t Salt
7 C Apples, Sliced
2 T Lemon Juice

Crumb Topping
1 C Brown Sugar, Packed
1/2 C Flour
1/2 C Quick Cooking Oatmeal (Not Instant!)
1/2 C Butter

Final Topping
1/4 C Caramel
1/2 C Pecans

Preheat over to 375F

If using pie crust, place in the bottom of a pie plate or casserole dish. Combine filling ingredients and mix well. Pour on top of crust.

Combine brown sugar, flour, and oatmeal. Mix well. Using hands or a fork, cut in butter. Sprinkle over pie.

Bake COVERED for 25 minutes. This prevents the crumb topping from burning. Remove cover and bake for another 25-35 minutes or until the top is golden brown.

Remove from oven. Drizzle caramel and pecans over the top.

Cheesecake

1 C Boiling Water
1 Envelope Knox Gelatin
1/2 C Sugar/Sweetner
2 PKGs Cream Cheese, Softened
1 t Vanilla
1 Graham Cracker Crust

Put water on to boil. Mix gelatin and sugar. Add to pan of boiling water. Mix well.

Combine cream cheese, vanilla, and water mixture in a blender. Blend well until completely smooth.

Pour into graham cracker crust and chill.

Incredibly Delicious Cheese Garlic Bread Spread

3 t Minced Garlic
1/2 t Garlic Powder
1/8 t Black Pepper
1/4 C Parmesan Cheese
1 C Shredded Cheddar Cheese

Preheat oven to 450F.

Microwave butter in bowl for about 30 seconds, or until halfway melted.

Mix in remaining ingredients using a fork.

Spread mixture of your choice of bread.

Bake for about 10 minutes or until top is golden brown and bubbly.

Depression Era Corn Chowder

1 lb Bacon, Cooked and Crumbled
2 (14.5 oz) Cans Chicken Broth
1 Can Corn, Drained
1 Can Cream Style Corn
1 Onion, Chopped
3 Medium Baking Potatoes, Diced
2 (12 oz) Cans Evaporated Milk***
1 (8 oz) PKG Colby Cheese, Cubed
Salt & Pepper, To Taste


Start Bacon.

Combine chicken broth, corn, onion, and potato. Bring to a boil, reduce heat, and simmer for 20 minutes or until potatoes are soft.

When bacon is done, add to soup. You don't need to drain the bacon very well or pat dry with a paper towel.

Add evaporated milk and Colby cheese cheese. Stir until cheese is melted.


*** Replace 1 can of evaporated milk with a package of cream cheese?

Subway Sweet Onion Sauce

1/2 C Light Corn Syrup
1 T Minced White Onions (Do NOT Use Dried)
1 T Red Wine Vinegar
2 t White Distilled Vinegar
1 t Balsamic Vinegar
1 t Brown Sugar
1 t Buttermilk Baking Mix
1/4 t Lemon Juice
1/4 t Poppy Seeds
1/4 t Salt
1 Pinch Cracked Black Pepper
1 Pinch Garlic Powder

Combine all ingredients in a small microwave-safe bowl.

Heat mixture uncovered in the microwave for 1 to 1 1/2 minutes on high until mixture boils rapidly.

Whisk well, cover and cool.

Alternatively, bring to a boil on top of stove.

Macaroni and Cheese

1 (16 oz) PKG Elbow Macaroni, Cooked
1/2 C Butter
1 t Salt
Pepper, To Taste
1/2 C Flour
3 1/2 C Milk
1 LB Cheese, Cubed or Grated
Breadcrumbs, Croutons, or Chips To Taste, Optional

Preheat oven to 350 degrees.

In a pan cook butter, salt, pepper and flour and stir until smooth.

Remove from heat add milk, return to heat and bring to a boil.

Boil 1 minute.

Remove from heat and add cheese, stir until melted.

Pour over elbows, sprinkle with optional Topping and bake at 350 degrees for 30 minutes.

Southwestern Stuffed Bell Peppers

1lb lean ground beef
1/4 cup chopped onions
1 (1 1/4 ounce) package taco seasoning mix
1 egg, beaten
2 cups cooked rice
4-6 bell peppers
1 (19 ounce) can diced tomatoes
1 (15-16 ounce) jar salsa
1 to taste shredded cheddar cheese
1 to taste sour cream

Combine beef, onion, seasoning mix and egg in a large bowl.

Add rice and mix well.

Cut peppers in half lengthwise; remove seeds and membrane.

Spread tomatoes on the bottom of an ovenproof 12 X 9 inch baking dish. The liquid from the tomatoes will reduce during cooking so if (like me) you like lots of sauce, add about a cup of water. This also helps make the peppers softer.

Place peppers, cut side up, on top of the tomatoes.

Spoon beef mixture into peppers, mounding as necessary.

Top each pepper with salsa.

Bake in preheated 375°F oven for 40-45 minutes or until beef is cooked thoroughly and peppers are soft.

Cover each pepper with cheese and return to oven, under the broiler, until the cheese melts- less than a minute, so watch carefully!

Serve with sour cream and additional salsa.

Panera's Cream Cheese Potato Soup



4 C Chicken Broth
4 C Peeled and Cubed Potatoes
1/4 C Minced Onion
1/2 t Seasoned Salt
1/4 t White Pepper
1/4 t Ground Red Pepper
1 (8 oz) PKG Cream Cheese, Cut Into Chunks

Combine broth, potatoes, onion, and spices. Boil on medium heat until potatoes are tender. Smash a few of the potatoes to release their starch for thickening. Reduce to low heat. Add cream cheese. Heat, stirring frequently, until cheese melts.

Simply Sour Cream Chicken Enchiladas



1 lb chicken breast, diced
1 medium onion, chopped
1 medium green pepper, chopped
1 tablespoon vegetable oil
8 (8 inch) flour tortillas, softened
1 1/2 cups grated Monterrey jack cheese or Mexican blend cheese, divided
1/4 cup butter
1/4 cup flour
1 (15 ounce) can chicken broth
1 cup sour cream
1 (4 ounce) can chopped green chilies

Preheat oven to 400F

Cook diced chicken breast, onion, and green pepper in oil until chicken is done and vegetables are soft.

Place about 1/2 c of filling and a about 1 TB of cheese into a tortilla. Place tortillas seam side down in a lightly sprayed 13x9 lasagna pan. Melt butter completely in the same pan. Add flour and stir until bubbly. Add chicken broth. Bring to a boil--sauce will thicken.

Stir in sour cream and chilies. Pour white sauce evenly over enchiladas. Top evenly with additional shredded cheese.

Bake for 20 minutes, or until bubbly.

Mug Pie


Be sure to use an over sized coffee mug for this. If you don't have one, be sure to set the cup on a paper plate in case it decides to run over the edges of the cup and make a mess.

About 1/2 C Chopped Fruit
1/4 C Sugar/Splenda
Cinnamon (or other flavorings)
2 Graham Crackers
1 Large Coffee Mug
Whipped Topping, Ice Cream, etc Optional

Chop up fruit into small pieces (strawberries, pitted cherries, peaches, apples, blueberries, pears, etc) and place in over-sized coffee mug.

Add sugar/splenda and whatever spices sound good...Just a shake or two. Stir well. Microwave a minute at a time, until fruit is soft, stirring after each minute. My peaches took 2 minutes.

Crush up 1 graham cracker. Mix into fruit. Transfer to a paper bowl and crumble the other graham cracker on top. You could also just eat it out of the mug if it's not too hot to handle. Serve with whipped topping, ice cream, or whatever you usually put on pie.

Asian Ginger Mahi Mahi

1LB of Mahi Mahi, or other Fish
3 T Soy Sauce
1 T Minced Garlic
3 T Balsamic Vinegar
2 T Olive Oil, Divided
1 T Honey
1/2 t Ground Ginger
Hot Cooked Rice & Crunchy Sauted Vegetables

To make marinade mix together soy sauce, garlic, vinegar, 1 T oil, honey, and ground ginger in a dish or ziplock bag. Add fish. Let marinate for at least 30 minutes. Reserve marinade

Start rice, if you're going to cook it. Cook fish in 1 T of oil in pan, add small amounts of marinade as needed so fish does not stick and burn. Remove fish from pan, cover, and keep warm. Add veggies and leftover marinade to pan. Turn up on high heat and cook, stirring occasionally, until the marinade glazes over.

Serve fish with Veggies and rice. Yum!

Dirty Shrimp in Beer Sauce

This is my very first shrimp recipe! Shrimp is very healthy for you, but I generally only like it deep fried. Now i'm branching out and trying to find delicious shrimp recipes. Found this one while browsing "Superbowl recipes" and decided to give it a try! The original recipe called for butter, but I used olive oil because it's healthier for you. 1/4 C of oil, in my opinion was too much, so I'm going to cut it down to about 2 T and post results here at a later time. If you don't like things spicy, then leave out the crushed red pepper flakes and the cayenne pepper.

2 lbs Shrimp (I liked the already cooked kind because I don't know how to cook it just yet)
1/4 C Olive Oil
2 t Minced Garlic
1 t Oregano
1 t Basil
1 t Thyme
1/2 t Cayenne Pepper
1/2 t Crushed Red Pepper Flakes
1/2 t Salt
1/2 t Black Pepper
1/2 C Beer
Hot cooked pasta or Rice
2 C Frozen Veggies like Broccoli

Start pasta or rice cooking. Meanwhile combine olive oil, garlic, spices, and herbs in a pan. Saute on low heat until fragrant. Add frozen veggies, shrimp, and beer. Cover and simmer until warmed through and shrimp are done. Server over pasta or rice.
