Skinny Laughing Cow Alfredo Sauce

1 T Butter
1 T Garlic
1/4 Onion, Chopped

1 C Non-Fat Milk
6 Wedges Light Swiss Laughing Cow Cheese
1/2 t Garlic Powder
1/2 t Onion Powder
1/2 t Black Pepper
1/4 t Salt

Melt butter. Add garlic and onion and saute until soft. Pour in milk, stir well. Cut cheese into small pieces and add to pan. Stir in garlic powder, onion powder, salt, and pepper. Simmer on medium low heat for about 15 min. Sauce will be very thick. If to thick, add a little more milk.

Pour over pasta, broccoli, chicken, etc.

Shrimp in Garlic Butter Sauce

5 T Butter
1 T Garlic
1 T Basil
2 t Oregano
2 lbs Pre-Cooked Shrimp, tail off.

Put shrimp in a pot of water and bring up to temp. Do not boil.

Melt butter. Add garlic and saute until golden. Stir in herbs. Pour over shrimp.

Easy Pecan Pie

3 Eggs
1 C Dark Maple Syrup
1 C Brown Sugar
2 T Butter, Melted
1 t Vanilla Extract
2 C Pecans, halved
1 (9 inch) Pie Crust, Unbaked

Combine eggs, maple syrup, brown sugar, butter, and vanilla extract. Mix until smooth. Stir in pecan halves. Pour into pie crust. Bake in 350F oven for 50-55 minutes or until toothpick comes out clean.

Meat Loaf

Sauce
1 C Ketchup
2 T Worcestershire Sauce
2 T Brown Sugar
2 t Mustard

Loaf
2 Eggs, Beaten
2 lbs Ground Beef (93/7)
4 Slices Bread

Combine sauce ingredients until smooth. Mix together the eggs, beef, 4 slices of bread torn into small pieces, and half the sauce. Form into loaf and top with remaining sauce. Bake, covered, in 400F oven for 1hr - 1hr 15min.

Bean Bake

1 lb Ground Beef (93/7)
1 Onion
1 Can Great Northern Beans
1 Can Pork 'n Beans
1 Can Chili with Beans
1/4 C bbq sauce (2.6 oz)
1/4 C Ketchup (2.4 oz)
1/4 C Brown Sugar

Brown ground beef and onion. Mix bbq sauce, ketchup, and brown sugar until smooth. Combine all in lasagna pan. Bake 30-35min in 325F oven.

Cheesy Chicken & Rice Casserole

1 Can Cream of Chicken Soup
1 1/3 C Water
3/4 C Uncooked Rice
1 t Onion Powder
1/2 t Black Pepper
2 C Frozen Mixed Vegetables
1 lb Chicken Breast Tenderloins
Shredded Cheddar Cheese

Season chicken according to taste and set to side.

Combine soup, water, rice, onion powder, black pepper, and frozen mixed veggies. Mix well. Transfer to large lasagna pan. Place chicken on top. Cover with foil. Bake in 375F oven for about 45 min or until chicken is done. Top with cheese and let sit for 10 min.

Smothered Green Beans

5 (15 oz) Cans Green Beans, Drained
1 lb Bacon, Cooked and Crumbled
2/3 C Brown Sugar
1/4 C Butter, Melted
1/4 C Soy Sauce
1 1/2 t Garlic Powder

Whisk together brown sugar, melted butter, soy sauce, and garlic powder. Stir in green beans and mix well. Transfer to large lasagna pan. Bake for 40 minutes in 350F oven.
