2 PKGs Yeast, About 5 t
2 C Warm Water
2 T Oil
2 t Salt
6 C Flour
Pesto
1 Head Freshly Roasted Garlic, Minced2/3 C Oil
1/4 C Dried Parsley
1/4 C Dried Basil
2 C Mozzarella Cheese
Place yeast in a bowl. Add in warm water and agitate slightly. Let proof for 10 minutes.
Add 2 T oil, salt and 2 C Flour. Mix well. Add remaining flour and knead until a smooth elastic ball forms. This will take quite awhile--probably 15-20 minutes.
Cover and let rise in a warm draft free place such as a microwave for 1hr.
Combine pesto ingredients in a bowl and mix well.
Punch down dough. Divide in half. Roll each half out into a 15x12 inch rectangle. Spread half the mixture onto the dough. Roll up and cut into 1/2 inch slices. Do the same for the other half. Place swirls on a cookie sheet and let raise for 30 minutes in a draft free place.
Preheat oven to 400F. Bake for 10-15 minutes or until golden brown.
