Potato Soup

1 t Butter
1 Onion, Chopped
2 Celery Stalks, Chopped
5 C Chicken Broth
1-1/2 LB Potatoes, Cubed
¼ C Cheddar Cheese
¼ C Ground White Pepper

In a large saucepan over medium heat, melt the butter. Add the onion and celery. Sauté stirring frequently for about 10 minutes.

Add the chicken broth and potatoes. Increase the heat to a medium high boil. Reduce heat to low. Cover and simmer for about 30 minutes or until the potatoes are tender.

Remove from heat. Let stand for 5 minutes. Take potato masher and pulverize potatoes. Add cheese and pepper. Simmer, stirring frequently, until cheese melts.
