Vegetables Mornay


1 (16 oz) Bag Frozen Carrots, Broccoli, and Cauliflower
1 Can Mushrooms, Drained
1 T Cornstarch
1/2 t Salt
1/8 t Pepper
3/4 C Milk
4 T Margarine, Divided
1/2 C Grated Swiss Cheese
1/4 C Croutons

Prepare frozen carrots, broccoli, and cauliflower according to package directions. When vegetables are done, add mushrooms and set aside.

Meanwhile, in a saucepan combine cornstarch, salt, pepper, milk, and 3T margarine. Stir until thickened and creamy. Stir in cheese until melted.

Add sauce to vegetables and microwave for about 3 minutes or until heated through. In another saucepan, melt remaining margarine and stir in croutons. Mix croutons into vegetable and sauce mixture.
